Before you start

Before starting, slice the andouille sausage into 1/4-inch rounds. If using frozen corn, thaw it by placing it in a colander and rinsing with warm water, then drain well. Dice the red and green bell peppers into small, even pieces.

Wash and halve or quarter the baby potatoes so they are bite-sized. Measure all the ingredients and have them ready. The slow cooker should be clean and dry. No need to preheat the slow cooker; it will heat up gradually during cooking.

Ingredients at a glance (10)
  • 1 lb andouille sausage, sliced into 1/4-inch rounds
  • 3 cups frozen corn kernels, thawed
  • 1 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1 1/2 lb baby potatoes, halved or quartered
  • 1 tbsp smoked paprika
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

Layering the Base

  1. Layer the Sausage
Place the sliced andouille sausage evenly across the bottom of the slow cooker. Spread the pieces so they cover the surface in a single layer, overlapping slightly if needed. This forms the base of the dish and lets the sausage render its smoky flavor as it cooks.
Look for The bottom of the slow cooker is fully covered with sausage slices.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If you prefer a crisper texture, brown the sausage in a skillet for 5 minutes before adding to the slow cooker.
  2. Add the Vegetables and Potatoes
Scatter the thawed corn, diced red and green bell peppers, and the baby potatoes over the sausage. Use a spoon to gently toss the vegetables with the sausage, but keep the layers mostly intact. The potatoes should be nestled among the vegetables.
Look for The slow cooker is filled with a colorful mix of corn, peppers, and potatoes.
Tip Cut the potatoes into similar-sized pieces so they cook evenly.
  3. Season with Paprika
Sprinkle the smoked paprika evenly over the top of the vegetables and potatoes. Use your fingers or a spoon to distribute the paprika as evenly as possible, so every bite gets a hint of smoky warmth.
Look for The paprika creates a reddish tint over the vegetables.
Tip For a spicier kick, add a pinch of cayenne pepper along with the paprika.

After this phase, the slow cooker insert holds a single layer of andouille slices, topped with a colorful mix of corn, red and green peppers, and potato pieces. The paprika dusts the top with a reddish-brown tint. The ingredients are dry and not yet saucy, but the aroma of smoked sausage and sweet peppers is already inviting. Everything is ready for the sauce.

Adding the Cream Sauce

  1. Make the Cream Sauce
In a mixing bowl, whisk together the heavy cream, chicken broth, kosher salt, and black pepper until well combined. The mixture should be smooth and slightly thickened from the cream.
Look for The sauce is a uniform pale cream color.
Tip Use cold cream for best results; it blends more easily with the broth.
  2. Pour the Sauce Over
Pour the cream sauce evenly over the ingredients in the slow cooker. Do not stir; the sauce will seep down through the layers during cooking, creating a creamy coating on everything.
Look for The sauce covers the top of the vegetables, pooling slightly in the center.
Tip If the sauce doesn't cover everything, that's fine—it will spread as the food cooks.

The cream sauce has been poured over the layered ingredients, creating a pale, creamy pool that seeps down between the vegetables and sausage. The sauce reaches about halfway up the sides of the slow cooker, leaving the top of the potatoes and corn slightly exposed. The mixture looks glossy and rich, with the paprika creating orange swirls in the cream. It's ready to cook.

Slow Cooking and Finishing

  1. Cook on Low
Cover the slow cooker and cook on low for 4 to 5 hours, or until the potatoes are tender when pierced with a fork. The sauce will thicken slightly and the flavors will meld together.
Look for The sauce is bubbly around the edges and the potatoes are easily pierced.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Stir and Serve
Once the potatoes are tender, gently stir the mixture to combine the sauce with the vegetables and sausage. Taste and adjust seasoning if needed. Serve hot, spooning the creamy mixture into bowls.
Look for The mixture is creamy and cohesive, with a pale orange sauce.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Let the dish rest for 5 minutes before serving to allow the sauce to thicken slightly.

After 4 to 5 hours on low, the slow cooker is filled with a thick, creamy, pale orange mixture. The potatoes are tender, the corn and peppers are soft, and the andouille is plump and heated through.

The sauce has thickened and clings to the ingredients. A spoonful lifted from the pot shows a cohesive, creamy stew with visible chunks of sausage and vegetables. The aroma is smoky, sweet, and savory.

Common mistakes

A common mistake is lifting the lid too often to check on the food. Each time the lid is lifted, heat escapes and adds to the cooking time. Another mistake is cutting the potatoes too large; they will take longer to cook.

Also, be careful not to over-stir the mixture while it cooks, as this can break up the potatoes and make the dish mushy. Finally, don't skip tasting the sauce before adding it—seasoning is key to a flavorful final dish.

How to tell it’s done

The dish is done when the potatoes are tender and easily pierced with a fork, and the sauce has thickened slightly. The andouille should be hot throughout, and the internal temperature of the sausage should reach at least 160°F (71°C) to ensure it's fully heated.

The corn and peppers will be soft but not mushy. The sauce will cling to the ingredients, and the flavors will have melded together into a rich, creamy, smoky mixture. Give it a taste and add more salt or pepper if needed.

  • Ground meat: 160°F (71°C) in the thickest part
