Before you start

Before starting, ensure all vegetables are thoroughly washed, peeled, and sliced into uniform pieces to promote even cooking. Have your beef broth measured and your slow cooker placed on a stable, heat-resistant surface near an electrical outlet.

Remove the sausages from the packaging and prepare them by making a single, shallow slit down the length of each link; this simple step allows the flavors of the broth and mustard to penetrate the meat deeply. Ensure you have a serving platter ready for the final presentation of the dish.

Ingredients at a glance (6)
  • 4 links cervelas sausages, slit lengthwise
  • 3 cups potatoes, peeled and sliced
  • 2 cups leeks, cleaned and sliced
  • 2 cups carrots, peeled and sliced
  • 3 tbsp Dijon mustard
  • 2 cups beef broth

Instructions

Assembling the base

  1. Prepare the slow cooker base
Arrange the slit cervelas sausages in the bottom of the slow cooker basin. Ensure they are distributed evenly to allow for consistent heat distribution during the long cooking process. If the sausages are very long, cut them into manageable pieces to fit the oval shape of the slow cooker.
Look for sausages are placed in a single layer
Tip Slitting the sausages helps them absorb the mustard and broth flavors.
  2. Add the vegetables
Layer the sliced potatoes, leeks, and carrots directly over the sausages. There is no need to stir at this point; layering the vegetables on top allows them to steam and soften perfectly in the aromatic broth that will develop during the cooking time.
Look for vegetables are piled on top of the sausages
Tip Try to keep the vegetable slices uniform in thickness for even cooking.

At the end of this phase, the slow cooker should be filled with the sausages and layered vegetables. Check that the ingredients are arranged in a stable, even manner. The sausages should be at the bottom, and the vegetables should be piled neatly on top. Ensure the power cord is clear of any water or debris before plugging in the device to begin the cooking process.

Adding aromatics

  1. Incorporate mustard and broth
Add the Dijon mustard over the vegetables using a spoon, ensuring it is distributed somewhat evenly. Pour the beef broth over the entire mixture. The liquid does not need to cover the vegetables completely, as the steam will circulate effectively throughout the closed slow cooker.
Look for mustard is dolloped and broth is poured
Tip Use a warm broth if available to help the slow cooker reach temperature faster.

The mustard and broth should now be incorporated into the slow cooker. Verify that the mustard is dolloped across the top of the vegetable layer. The broth should be poured steadily to ensure it reaches the bottom of the basin.

Once the lid is placed on top, the environment should remain undisturbed, allowing the heat to build and the ingredients to begin their transition into a cohesive, flavorful stew.

Slow cooking

  1. Slow cook and serve
Cover the slow cooker and set it to low for 4 hours, or until the vegetables are fork-tender and the sausages reach an internal temperature of 160°F (71°C). Let the dish rest for 5 minutes before serving to allow the juices to settle and the flavors to meld together perfectly.
Look for vegetables are tender and sausages are hot
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Check the internal temperature of the sausages to ensure they are fully cooked.

After four hours, the dish should be fragrant and the liquid should have reduced slightly into a flavorful, mustard-scented sauce. Test a potato chunk with a fork to ensure it is soft, and confirm the sausages have reached the safe temperature of 160°F (71°C). The steam should be visible and the vegetables should appear glossy and tender, indicating that the stew is ready to be served immediately.

Common mistakes

A common mistake is overcrowding the slow cooker, which prevents the steam from circulating and leads to unevenly cooked vegetables. Another error is using sausages that are too fatty or salty, which can overpower the delicate balance of the leeks and carrots.

Always ensure the lid is properly sealed throughout the cooking duration; lifting the lid too frequently releases heat and moisture, significantly increasing the total cooking time and potentially drying out the sausages. Finally, avoid cutting vegetables into pieces that are too small, as they may disintegrate.

How to tell it’s done

The dish is considered done when the vegetables are easily pierced with a fork and the sausages have reached an internal temperature of 160°F (71°C). The broth should be steaming and slightly thickened, with a glossy appearance from the mustard.

If you find the sausages are not yet at the required temperature, continue cooking for an additional 15 minutes before checking again. Let the dish sit for 5 minutes after turning off the heat to allow the sauce to stabilize.

  • Ground meat: 160°F (71°C) in the thickest part
