Tips for success
For the most tender lamb, choose a well-marbled shoulder and keep the bone in. The bone adds flavor and helps the meat stay moist during the long cook. If you can only find boneless, cut it into larger 2-inch chunks and check for doneness at 5 1/2 hours.
Let the rogan josh rest for 5 minutes after cooking before serving; this allows the sauce to settle and the flavors to meld. The rogan oil will separate and float to the top, which is traditional and adds richness.
To achieve the signature crimson color, use high-quality Kashmiri chili powder. If the color is too pale, you can add a teaspoon of paprika along with the chili. The yogurt should be whisked thoroughly with the spices to avoid any lumps.
If you prefer a smoother gravy, you can puree the sauce with an immersion blender before adding the lamb back, but this is not traditional. For extra depth, you can add a pinch of asafoetida (hing) along with the spices, but it is optional.
Variations
- Chicken Rogan Josh: Substitute 2 pounds of bone-in chicken thighs for the lamb. Brown the chicken briefly, then reduce the slow-cooking time to 4 hours on low, or until the chicken is cooked through and tender. The yogurt sauce works beautifully with chicken, and the dish is ready faster.
- Vegetarian Rogan Josh: Replace the lamb with 2 pounds of mixed vegetables like cauliflower, potatoes, and carrots. Add them in the last 2 hours of cooking, and use vegetable broth instead of water. The spice-yogurt base creates a rich, hearty gravy that satisfies without meat.
- Spicier Version: For those who enjoy more heat, add 1 teaspoon of cayenne pepper or a chopped green chili along with the spice mixture. You can also increase the Kashmiri chili powder to 3 tablespoons for a deeper red color and a gentle kick. Adjust to taste.
- Pressure Cooker Adaptation: To make this in a pressure cooker, brown the lamb in the pot, then add the yogurt-spice mixture and water. Cook on high pressure for 35 minutes, then natural release for 10 minutes. The sauce will be slightly thinner; simmer on sauté mode to thicken if desired.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop, adding a splash of water if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring occasionally, until piping hot. Add a little water or broth to loosen the sauce if it has thickened.
Store leftover rogan josh in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop, and the dish often tastes even better the next day.
When reheating, gently warm in a saucepan over low heat, adding a splash of water or broth if the gravy has thickened too much. Avoid microwaving at high power, as it can toughen the meat. Let the dish cool to room temperature within 2 hours of cooking before refrigerating.
This rogan josh can be made up to 2 days ahead. Prepare the recipe through step 4, then let it cool completely and refrigerate in the slow cooker insert or a covered pot. Reheat gently on the stovetop or in the slow cooker on low for 1 to 2 hours, stirring occasionally.
The rogan oil may solidify when chilled; it will melt back into the sauce as it reheats. You can also freeze the cooked rogan josh for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the rogan josh over saffron-infused basmati pulao rice, which soaks up the rich gravy beautifully. The rice’s delicate aroma contrasts with the bold spices of the curry. Garnish with fresh cilantro leaves and thin strips of fresh ginger for a bright, peppery finish. A side of warm naan or roti is perfect for scooping up every last bit of sauce. For a complete meal, add a simple cucumber raita or a crisp green salad.
This dish is hearty enough to be a main course on its own. Pair it with a full-bodied red wine like a Syrah or a cold lager to balance the spices. For a traditional Kashmiri touch, serve with a side of steamed vegetables or a simple lentil dish. The rogan josh also pairs well with a dollop of plain yogurt on top, which adds cooling contrast. Leftovers can be repurposed into a filling for wraps or served over rice with a fried egg for a quick lunch.

Slow-Cooker Kashmiri Lamb Rogan Josh

Ingredients
- 2 lb bone-in lamb shoulder, cut into chunks
- 1/2 cup full-fat plain yogurt
- 2 tbsp Kashmiri red chili powder
- 1 tbsp ground fennel seed
- 1 tsp dry ginger powder
- 4 black cardamom pods, lightly crushed
- 4 whole cloves
- 1/2 cup caramelized onion paste
- 1 tsp kosher salt
- 1/2 cup water
Instructions
- Pat the lamb chunks dry with paper towels and season lightly with salt. Heat a large skillet over medium-high heat. Working in batches, sear the lamb on all sides until deeply browned, about 3 to 4 minutes per batch. Transfer the browned lamb to the slow cooker insert. Let it rest for 3 minutes before slicing.
- In a small bowl, whisk together the yogurt, Kashmiri red chili powder, ground fennel, dry ginger, crushed black cardamom pods, and cloves until smooth. The mixture will be thick and deeply red.
- Spread the caramelized onion paste evenly over the browned lamb in the slow cooker. Pour the spice-yogurt mixture over the top. Add the water and stir gently to combine everything, being careful not to break the lamb.
- Cover the slow cooker and set it to LOW. Cook for 6 hours, without lifting the lid, until the lamb is fork-tender and the gravy has thickened to a glossy, deep red rogan oil sheen. Let it rest for 3 minutes before slicing.
- Once the lamb is tender, taste the gravy and adjust salt if needed. Serve hot over saffron-infused basmati pulao rice, garnished with fresh cilantro and ginger juliennes.
