Tips for success

To get the best sear on the eggplant, make sure the skillet is hot before adding the oil. The eggplant should sizzle immediately when it hits the pan.

If you have time, salt the eggplant chunks and let them sit for 30 minutes, then pat dry; this removes excess moisture and helps them brown better. Don’t stir the eggplant too often—let it develop a golden crust before turning.

For the meatballs, use a light touch when mixing the meat with the spices; overmixing can make them tough. Roll them into uniform sizes so they cook evenly.

If the mixture sticks to your hands, wet them slightly with water. The meatballs can be made a day ahead and stored in the refrigerator, which actually helps the flavors meld.

Variations

  • Spicy Harissa Version: Add 1-2 tablespoons of harissa paste to the tomato sauce along with the garlic. This adds a smoky, spicy depth that pairs wonderfully with the eggplant and meatballs. Reduce the red pepper flakes if you prefer less heat.
  • Lamb and Mint Variation: Swap the ground beef for ground lamb and add 1 tablespoon of chopped fresh mint to the meatball mixture. Finish the dish with a sprinkle of fresh mint instead of parsley for a brighter, more aromatic flavor.
  • Vegetarian Option: Replace the meatballs with falafel or cooked chickpeas for a vegetarian version. If using falafel, add them in the last few minutes of simmering to warm through without becoming soggy. Adjust seasoning to taste.
  • Creamy Yogurt Swirl: Before serving, dollop a few spoonfuls of plain Greek yogurt over the top and gently swirl it into the sauce. This adds a cooling, tangy contrast to the rich tomato sauce. It’s especially nice if you like a creamy texture.

Storage and make-ahead

Fridge
Store leftover skillet eggplant and meatball meze in an airtight container in the refrigerator for up to 3 days.
Freezer
This dish freezes well for up to 2 months. Cool completely, then transfer to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. Add a splash of water or broth if the sauce is too thick.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop overnight, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of water if the sauce has thickened too much.

The meatballs can be formed up to 24 hours in advance and kept in the refrigerator. You can also prepare the grated tomatoes and slice the peppers ahead of time. The entire dish can be made a day ahead and reheated gently, though the eggplant may soften further upon reheating.

Serving ideas

Serve the skillet directly at the table, with a basket of warm crusty bread on the side. The bread is essential for soaking up the rich, garlicky sauce.

You can also serve this over rice, couscous, or orzo if you prefer a more substantial meal. A simple green salad with a lemony vinaigrette would round out the meal nicely.

For a meze-style spread, serve this alongside other small plates like hummus, tzatziki, and stuffed grape leaves.

It also pairs well with a glass of full-bodied red wine or a crisp white. The leftovers are excellent stuffed into pita bread with a dollop of yogurt, making a great lunch the next day.

Frequently asked questions

Can this dish be made ahead of time?
Yes, the entire dish can be made a day ahead. Let it cool completely, then store it in an airtight container in the refrigerator. Reheat gently on the stovetop, adding a splash of water if the sauce has thickened. The flavors will actually meld and deepen overnight, making it even more delicious.
How can the eggplant be kept from becoming greasy?
Salting the eggplant before cooking helps draw out excess moisture, which prevents it from absorbing too much oil. After salting, pat the chunks dry with paper towels. Also, make sure the skillet is hot enough before adding the oil; the eggplant should sizzle immediately. Use a light hand with the oil.
What is the best way to grate fresh tomatoes?
Use a box grater set over a bowl. Cut the tomatoes in half horizontally and grate them cut-side down on the large holes. The flesh will grate into the bowl, leaving the skin in your hand. Discard the skins. This method works best with ripe, juicy tomatoes.
Can this recipe be made without meat?
Absolutely. Replace the meatballs with cooked chickpeas or falafel. If using chickpeas, add them to the sauce during the last 10 minutes of simmering to warm through and absorb flavor. For falafel, add them in the last 2-3 minutes so they stay crisp.
What type of bread works best for dipping?
A crusty bread with a sturdy texture, like a sourdough boule or a rustic Italian loaf, is ideal. It should be able to hold up to the sauce without falling apart. Warm the bread in the oven for a few minutes before serving to enhance its crust.

Skillet with eggplant and meatballs in tomato sauce, garnished with parsley, with crusty bread on the side.

Ingredients

  • 3 tbsp olive oil, divided
  • 1 large eggplant, cut into chunks
  • 300 g ground beef
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt, divided
  • black pepper, to taste
  • 2 sweet peppers, sliced
  • 4 cloves garlic, minced
  • 2 cups grated fresh tomatoes
  • 2 tbsp tomato paste
  • 1/2 tsp red pepper flakes
  • 1/4 cup water
  • 1/4 cup fresh parsley, chopped
  • crusty bread, for serving

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the eggplant chunks in a single layer and season with a pinch of salt. Cook, turning occasionally, until golden brown and tender on all sides, about 6-8 minutes. Use tongs to transfer the eggplant to a plate and set aside.
  2. In a mixing bowl, combine the ground beef, ground cumin, ground coriander, smoked paprika, 1/2 teaspoon of salt, and a few grinds of black pepper. Mix gently with your hands until just combined. Roll the mixture into mini meatballs, about 1 inch in diameter. You should get roughly 20 meatballs.
  3. Wipe out the skillet and heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the meatballs in a single layer and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes. The internal temperature should reach 160°F (71°C). Transfer the meatballs to a plate and set aside.
  4. In the same skillet, add the sliced sweet peppers and cook over medium heat, stirring occasionally, until they begin to soften, about 3-4 minutes. Add the minced garlic and cook for 1 minute more, until fragrant.
  5. Add the grated fresh tomatoes, tomato paste, red pepper flakes, and the remaining 1/2 teaspoon of salt to the skillet. Stir in the water, scraping up any browned bits from the bottom of the pan. Bring the sauce to a simmer, then reduce the heat to low.
  6. Let the sauce simmer gently on low heat for 15 minutes, stirring occasionally, until it thickens and the flavors meld. The sauce should reduce slightly and become glossy.
  7. Return the seared eggplant and meatballs to the skillet, nestling them into the sauce. Spoon some sauce over the top and let everything warm through together for 2-3 minutes. Remove from heat and shower with chopped fresh parsley.
  8. Serve the skillet directly at the table with warm crusty bread for dipping. Encourage everyone to tear off pieces of bread and scoop up the eggplant, meatballs, and sauce.
