Before you start

Before you begin, ensure your oven is preheated to the correct temperature to maintain a steady environment for the rice to absorb the liquid effectively. Have all your ingredients measured and ready, especially the broth, so you can assemble the dish quickly.

If you are using refrigerated chicken, take it out of the fridge about 15 minutes before assembling to help it cook more evenly, but keep it in a cool spot.

Ingredients at a glance (4)
  • 4 boneless skinless chicken breasts
  • 1 1/2 cups uncooked rice and toasted vermicelli
  • 3 cups buttery chicken broth
  • 1 tbsp dried parsley

Instructions

Assembly phase

  1. Assemble the base
Preheat the oven to 375°F (190°C). Arrange the uncooked rice and toasted vermicelli in an even layer at the bottom of a large rectangular ceramic baking dish. Place the raw boneless skinless chicken breasts on top of the rice mixture, ensuring they are spaced evenly across the dish.
Look for The rice should be spread in an even layer to ensure consistent cooking.
Tip Ensure the chicken breasts are of similar thickness so they finish cooking at the same time.

At the end of this phase, the chicken should be evenly distributed over the rice mixture in the baking dish. The ingredients should look uniform, with the rice spread out well so that every grain is positioned to absorb the seasoned broth that you will add in the following step.

Liquid incorporation

  1. Add liquid and season
Slowly pour the buttery chicken broth over the chicken and rice in the baking dish. Sprinkle the dried parsley evenly over the top of the chicken breasts and the liquid. Cover the baking dish tightly with aluminum foil to trap the steam, which is essential for cooking the rice through.
Look for The broth should almost submerge the rice, providing enough liquid for absorption during the baking process.
Tip Covering the dish tightly is the key to preventing the rice from drying out while the chicken roasts.

Once the broth is poured, the dish should look well-moistened.

The parsley should be distributed over the surface, and the foil must be securely crimped around the edges of the ceramic dish to ensure no steam escapes, which is the most critical check before placing the dish into the hot oven.

Final bake

  1. Bake and finish
Place the dish in the oven and bake until the rice is tender and the chicken is fully cooked. The internal temperature of the chicken must reach 165°F (74°C) when measured with a meat thermometer at the thickest part. Remove from the oven and let the dish rest for at least 5 minutes before serving to allow the juices to redistribute and the rice to firm up slightly.
Look for The edges should appear golden and bubbling, and the chicken should be opaque throughout.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the internal temperature of the chicken to ensure it is safely cooked through without overcooking the delicate rice.

The dish is finished when the edges are bubbling and golden, and the chicken has reached the safe temperature of 165°F (74°C). The rice should have absorbed the liquid and become fluffy and tender. Check that the chicken is cooked through before taking it out of the oven to rest.

Common mistakes

A common mistake is failing to seal the baking dish tightly with foil, which allows steam to escape and results in undercooked, crunchy rice. Another error is overcrowding the dish, which prevents the heat from circulating properly around the chicken.

Finally, do not rush the resting period; allowing the dish to sit for at least 5 minutes is crucial for the rice to settle and for the chicken juices to redistribute properly.

How to tell it’s done

The chicken is perfectly done when it reaches an internal temperature of 165°F (74°C). At this point, the meat should be opaque and firm to the touch, while the rice should be tender, fluffy, and have absorbed most of the liquid.

If the rice still looks a bit soupy, remove the foil and bake for an additional few minutes to allow excess moisture to evaporate before serving the dish.

  • Poultry: 165°F (74°C) in the thickest part
