Tips for success

For the best cheese pull, use fresh mozzarella and shred it just before baking. If the cheese browns too quickly, tent the pizza with foil during the last few minutes.

Let the pizza rest for a few minutes after baking—this allows the cheese to set and makes slicing cleaner.

To get a crispier bottom, preheat the baking sheet in the oven for 10 minutes before adding the dough.

If you prefer a softer crust, use a glass or ceramic baking dish. For extra flavor, brush the crust with garlic butter after baking.

Variations

  • Spicy Honey: Drizzle the baked pizza with hot honey for a sweet-heat kick. The honey caramelizes slightly and complements the spicy sucuk.
  • Vegetarian: Omit the sucuk and add extra vegetables like mushrooms, red onions, or artichoke hearts. Increase the mozzarella to 4 cups for extra cheesiness.
  • Four Cheese: Replace half of the mozzarella with provolone, fontina, and parmesan. The blend adds a nutty, savory depth.
  • Breakfast Pizza: Top the pizza with cooked scrambled eggs and crumbled breakfast sausage instead of sucuk. Bake as directed, then add a drizzle of hot sauce.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 5-7 minutes until hot and the cheese is bubbling.
Freezer
Freeze baked pizza slices in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
Reheat
Reheat individual slices in a toaster oven or skillet for a crisp bottom. Microwave is faster but will soften the crust.

Store leftover pizza in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 5-7 minutes until hot and the cheese is bubbling. For best results, reheat on a wire rack to keep the bottom crisp.

The dough can be prepared up to 2 days in advance. After kneading, place in an oiled bowl, cover, and refrigerate.

Let it come to room temperature for 30 minutes before shaping. You can also assemble the entire pizza (with toppings) and refrigerate for up to 4 hours before baking.

Serving ideas

Serve the pizza warm, cut into thick squares. It pairs well with a simple green salad or pickled vegetables. For a heartier meal, serve alongside roasted vegetables or a bowl of soup.

This pizza is perfect for sharing—whether for a casual dinner, game day, or a family gathering.

The combination of spicy sucuk and sweet peppers is a crowd-pleaser. Offer extra chili flakes or hot sauce for those who like more heat.

Frequently asked questions

Can this pizza be made gluten-free?
Yes, substitute the all-purpose flour with a 1-to-1 gluten-free flour blend. The dough may be stickier, so add a bit more flour as needed. Bake time may vary; check for a golden crust.
What is sucuk and where can it be found?
Sucuk is a spicy, fermented Turkish sausage made from beef. It's available at Middle Eastern grocery stores or online. If unavailable, use spicy Italian sausage or pepperoni.
Can the dough be made ahead and frozen?
Yes, after kneading, wrap the dough tightly in plastic wrap and freeze for up to 3 months. Thaw overnight in the refrigerator, then let come to room temperature before shaping.
Why is your crust not crispy on the bottom?
Ensure the baking sheet is well-oiled and preheated if possible. Also, avoid overloading with toppings, which can trap moisture. Bake on the lowest oven rack for a crisper bottom.
Can this recipe be halved?
Yes, halve all ingredients and use a smaller baking sheet (about 10x15 inches). Adjust baking time to 15-18 minutes, checking for doneness.

Thick sheet-pan pizza with melted mozzarella, sucuk slices, and sweet peppers on a golden crust

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 2 1/4 tsp active dry yeast
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 8 oz sucuk (Turkish sausage), sliced
  • 2 sweet peppers, sliced
  • 3 cups shredded mozzarella cheese

Instructions

  1. In a small bowl, combine the warm milk, warm water, sugar, and yeast. Let stand until foamy, about 5 minutes. In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil, then stir until a shaggy dough forms. Turn onto a floured surface and knead until smooth and elastic, about 8 minutes. Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.
  2. Preheat the oven to 420°F. Oil a 13x18-inch baking sheet generously. Punch down the dough and transfer to the sheet. Using oiled fingertips, press and stretch the dough evenly to the edges. If it springs back, let it rest for 5 minutes, then continue.
  3. Scatter the shredded mozzarella evenly over the dough. Arrange the sucuk slices and sweet pepper slices on top, distributing them evenly.
  4. Place the baking sheet in the preheated oven and bake for 18 minutes, until the crust is puffed and golden and the cheese is bubbling with charred spots. If using sucuk, ensure it reaches 160°F.
  5. Remove the pizza from the oven and let it rest for 5 minutes. Cut into thick squares and serve warm.
