Before you start
Preheat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper. Gather all the ingredients: eggs, milk, olive oil, flour, salt, sucuk, corn, bell pepper, and mozzarella.
Slice the sucuk thinly, slice the bell pepper, and measure the corn and cheese. If using frozen corn, thaw it and pat dry. Have a blender and a pizza wheel or knife ready. The batter comes together in under a minute, so have the toppings prepped before you blend.
Ingredients at a glance (9)
- 2 large eggs
- 2 cups whole milk
- 3 tbsp olive oil
- 1 1/2 cups all-purpose flour
- 1/2 tsp fine salt
- 6 oz sucuk sausage, thinly sliced
- 1 cup corn kernels (fresh or frozen, thawed)
- 1 red bell pepper, thinly sliced
- 2 cups shredded mozzarella cheese
Instructions
Blend and Pour
- Blend the Crepe BatterPreheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. In a blender, combine the eggs, milk, olive oil, flour, and salt. Blend on high until the mixture is completely smooth, about 30 seconds. Scrape down the sides if needed and blend again briefly. The batter should be the consistency of heavy cream.Look for Batter is silky and lump-free, with no dry flour visible.Tip Blend just until smooth; over-blending can create too many air bubbles.
- Pour and TiltPour the batter onto the prepared baking sheet. Tilt the sheet gently so the batter spreads evenly across the entire surface, reaching the edges. The layer will be thin, about 1/8 inch thick. Tap the sheet on the counter once or twice to release any large bubbles.Look for Batter covers the whole sheet evenly, with no puddles.Tip If the batter pools at one end, tilt the sheet slowly to redistribute.
- Par-Bake the CrustPlace the sheet in the preheated oven and bake for 8 minutes, until the crepe is just set and barely starting to color at the edges. It will look dry and slightly puffed in places. Remove from the oven and set aside. Keep the oven on.Look for The crepe is no longer wet and peels easily from the paper.Tip Do not over-bake at this stage; the crust will finish browning during the final bake.
At this point, the batter should be completely smooth, with the consistency of heavy cream. When poured onto the baking sheet, it should spread evenly and thinly, reaching all corners.
The sheet should look like a pale, liquid crepe. Before baking, tap the sheet to release any large bubbles. The batter will look very thin, but that is exactly right — it bakes into a crisp, sturdy crust.
Top and Bake
- Top the PizzaScatter the sliced sucuk, corn kernels, and red bell pepper evenly over the par-baked crust. Sprinkle the shredded mozzarella over the top, covering the toppings completely. The cheese should reach the edges to create a crispy, golden rim.Look for Toppings are spread evenly, with cheese covering everything.Tip Leave a 1/2-inch border of cheese at the edges for the crispiest bites.
- Bake Until Puffed and BubblyReturn the sheet to the oven and bake for 17 to 20 minutes, until the cheese is fully melted, bubbly, and browned in spots, and the edges of the crepe are deep golden and crispy. The crust will puff slightly around the toppings.Look for Cheese is bubbling and browned; crust edges are crisp and golden.Safe temperature 160°F (71°C) internal temperature (ground meat)Tip Rotate the sheet halfway through for even browning.
After the par-bake, the crepe will be set and slightly dry on top, with edges just beginning to color. The toppings should be scattered evenly, and the cheese should cover everything in a thick, even layer. As it bakes, the cheese will melt, bubble, and brown in spots, while the edges of the crepe turn deep golden. The kitchen will smell of toasted bread and melted cheese.
Rest and Serve
- Rest and SliceRemove the pizza from the oven and let it rest on a wire rack for 5 minutes. This allows the cheese to set slightly and makes slicing cleaner. Use a pizza wheel or a sharp knife to cut into squares, then lift each piece with a spatula to serve.Look for Cheese is set but still stretchy; squares lift cleanly.Tip For the longest cheese pulls, slice just before serving.
The finished pizza should have a crisp, golden-brown edge and a bubbly, browned cheese top. Letting it rest for 5 minutes allows the cheese to set slightly, so slices hold together. When you cut into it, the cheese should stretch and pull, and the crust should crackle as the pizza wheel passes. Serve hot, with the cheese pull as the star.
Common mistakes
The most common mistake is over-blending the batter, which incorporates too much air and can make the crust puff up unevenly. Blend just until smooth. Another pitfall is overloading the toppings; too many wet toppings can make the center soggy.
Pat corn dry and use a light hand with the peppers. Finally, do not open the oven too often during baking, as this lets out heat and can prevent the crust from crisping. Rotate once halfway through.
How to tell it’s done
The pizza is done when the cheese is fully melted, bubbly, and browned in spots, and the edges of the crepe are deep golden and crisp. The center should be set and not jiggle when the sheet is gently shaken.
The internal temperature of the sucuk should reach 160°F (71°C), though since it is a cooked sausage, this is just to ensure it is heated through. Let the pizza rest for 5 minutes before slicing so the cheese sets slightly and the pieces hold together.
