Before you start

Before beginning, ensure all vegetables are thoroughly washed and dried. Cut the zucchini into consistent half-moons and the chicken breast into bite-sized pieces to ensure they finish cooking at the same time. Have your parchment paper ready on your rimmed baking sheet.

Preheating the oven is crucial to ensure the roasting process starts immediately upon placing the pan inside. Keep the cheese shredded and ready to use, as it will be added only in the final moments of the cooking process.

Ingredients at a glance (6)
  • 1.5 lb chicken breast, cut into chunks
  • 3 medium zucchini, sliced into half-moons
  • 1 cup yellow corn kernels
  • 4 oz diced green chiles
  • 2 tbsp olive oil
  • 1 cup shredded Monterey Jack cheese

Instructions

Oven Roasting

  1. Prepare the Ingredients
Preheat the oven to 400°F (200°C). Line a rimmed sheet pan with parchment paper. Arrange the chicken breast chunks, zucchini half-moons, and corn kernels in a single, even layer on the prepared sheet pan. Ensure the pieces are not overcrowded to allow for proper roasting.
Look for Ingredients should be spread out in one layer.
Tip Cut the zucchini into uniform half-moons to ensure even cooking across the pan.

At the end of this phase, the kitchen should smell of roasted corn and savory chicken. The chicken chunks should appear opaque and firm, while the zucchini should be softening and starting to take on some color at the edges.

Check that the liquid released from the vegetables has mostly evaporated, leaving the ingredients glistening with olive oil and green chiles. If the chicken still looks pink, continue to roast for a few more minutes before proceeding.

Melting the Cheese

  1. Season and Bake
Drizzle the olive oil and diced green chiles over the chicken and vegetable mixture on the sheet pan. Toss lightly to coat everything evenly. Place the pan in the preheated oven and bake until the chicken is cooked through and the vegetables are tender, about 20 to 25 minutes.
Look for Vegetables should be golden at the edges.
Tip Distribute the green chiles evenly to impart flavor across all ingredients.

Once you add the Monterey Jack, the cheese will quickly soften and spread across the surface of the chicken and vegetables. After two to three minutes in the oven, the cheese should look glossy, smooth, and completely melted. It should not be browning or forming a hard crust. The entire pan should look cohesive, with the cheese binding the small pieces of corn and chiles to the chicken and zucchini.

Final Resting

  1. Add Cheese and Finish
Remove the sheet pan from the oven. Scatter the shredded Monterey Jack cheese over the top of the chicken and vegetables. Return the pan to the oven for 2 to 3 minutes, or until the cheese is melted and bubbly. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving. Let the dish rest for 5 minutes.
Look for Cheese should be melted into a smooth layer.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not over-bake once the cheese is added, as it can separate if heated for too long.

After removing the pan from the oven, the dish should be sizzling slightly. The cheese will begin to set slightly as it cools, making it easier to serve. The chicken should remain moist, and the vegetables should hold their shape without being mushy. The resting period is essential for the flavors to settle and for the dish to reach an ideal temperature for eating. Once the five minutes have passed, the meal is ready to be portioned and served.

Common mistakes

Avoid overcrowding the sheet pan, as this causes the ingredients to steam rather than roast, resulting in soggy vegetables and rubbery chicken. Ensure the oven is fully preheated before putting the pan inside to avoid uneven cooking.

Do not add the cheese too early; it only needs a few minutes to melt. If added at the beginning, the cheese will burn and dry out before the chicken is finished. Finally, do not skip the five-minute resting period, as this allows the juices to redistribute.

How to tell it’s done

The dish is ready when the chicken is fully cooked, showing no pink in the center, and reaches an internal temperature of 165°F (74°C). The zucchini should be fork-tender with slightly golden-brown edges.

The corn should appear bright and slightly toasted. The cheese must be fully melted and smooth, covering the mixture evenly without browning too deeply. Always use a meat thermometer in the largest piece of chicken to confirm it is safe to eat.
