Tips for success
For the best flavor, sear the chuck roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep crust and extra richness to the gravy. You can also deglaze the skillet with a splash of broth and add that to the pot for even more depth.
If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
Let it simmer until the gravy thickens. For a thinner sauce, add a bit of beef broth or water at the end to reach your desired consistency.
Variations
- Add Mushrooms: Add 8 oz of sliced cremini mushrooms along with the shallots and carrots. They'll cook down and add an earthy depth to the gravy. Sauté them in butter first for extra flavor.
- Red Wine Twist: Replace 1/2 cup of the brown gravy with 1/2 cup dry red wine. The wine adds acidity and complexity, balancing the richness of the beef. Add it with the gravy and let it simmer.
- Herb Infusion: Tuck a few sprigs of fresh thyme and rosemary around the roast before cooking. The herbs infuse the gravy with aromatic notes. Remove the sprigs before serving.
- Spicy Kick: Add 1 teaspoon of smoked paprika and a pinch of cayenne pepper to the gravy for a subtle smoky heat. This works well if you like a little spice in your comfort food.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
This recipe is perfect for meal prep. Assemble everything in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on LOW as directed. You can also cook the roast a day ahead, shred it, and reheat with the gravy when ready to serve.
Serving ideas
Serve this chuck roast over creamy mashed potatoes, egg noodles, or polenta to soak up the rich gravy.
The shallots and carrots make it a complete meal, but a side of crusty bread or a simple green salad balances the richness. For a fun twist, pile the shredded beef onto toasted brioche slider buns for a hearty sandwich.
This dish shines as a Sunday supper or a weeknight comfort meal. The leftovers are just as good, if not better, the next day.
Pair it with a full-bodied red wine like a Zinfandel or Syrah to complement the deep beefy flavors. Garnish with fresh parsley for a pop of color, if you like.

Shallot Carrot Brown Gravy Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 6 whole shallots, peeled
- 1 lb baby carrots
- 2 cups rich brown gravy (store-bought or homemade)
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Scatter the peeled shallots and baby carrots around the roast, tucking them into any gaps. Pour the brown gravy over the top, then dot with the butter pats.
- Cover the slow cooker and set it to LOW. Cook for 8 to 10 hours, until the beef is fork-tender and easily shreds. The gravy will deepen in color and the vegetables will soften and caramelize. Let it rest for 3 minutes before slicing.
- Once the roast is tender, transfer it to a cutting board. Let it rest for at least 3 minutes, then shred the beef with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently into the gravy.
- Spoon the shredded beef, shallots, and carrots onto plates or into bowls. Ladle extra gravy over the top. Serve hot, with toasted brioche slider buns if desired.
