Before you start
Before starting, measure all ingredients. Warm the milk and water to about 110°F (43°C) — warm to the touch but not hot. Have the beef patties cooked and at room temperature.
Caramelize the onions ahead of time if not using store-bought. Line a baking sheet with parchment paper. Clear a workspace for kneading and rolling the dough. Preheat the oven to 380°F (190°C) when the dough is almost risen.

Instructions
Dough Rising and Prep
- Make the DoughIn a large bowl, combine the warm milk, warm water, oil, yeast, sugar, and salt. Let sit for 5 minutes until the yeast is foamy. Add the flour and stir with a wooden spoon until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise until doubled, about 1 hour.Look for The dough is smooth, soft, and springs back when pressed.Tip If the dough is too sticky, add flour a tablespoon at a time; if too dry, add warm water a teaspoon at a time.
- Preheat and Prepare FillingWhile the dough rises, preheat the oven to 380°F (190°C). Line a baking sheet with parchment paper. Have the cooked beef patties, cheddar slices, and caramelized onions ready at hand. If the patties are cold, let them sit at room temperature for up to 30 minutes before assembling.Look for Oven is hot, filling ingredients are ready to use.Tip Using room-temperature patties helps the dough bake evenly without undercooking the center.
After kneading, the dough should be smooth, elastic, and slightly tacky. It should double in size in about an hour in a warm spot. The yeast should be foamy before adding flour.
The filling ingredients should be ready: cooked patties, sliced cheese, and caramelized onions. The oven should be preheated to 380°F (190°C) when you're ready to assemble.
Assembly and Topping
- Assemble the Stuffed BurgersPunch down the risen dough and divide it into 4 equal pieces. On a lightly floured surface, roll each piece into a 6-inch circle. Place one beef patty in the center of each circle. Top with 2 ounces of cheddar cheese and a quarter of the caramelized onions. Gather the dough edges up over the filling and pinch tightly to seal completely, forming a ball. Place seam-side down on the prepared baking sheet.Look for Each dough ball is tightly sealed with no gaps.Tip Pinch the dough firmly to prevent the cheese from leaking during baking.
- Brush and SprinkleIn a small bowl, beat the egg with 1 tablespoon of water to make an egg wash. Brush the tops of the dough balls generously with the egg wash. Sprinkle each with sesame seeds, pressing lightly so they stick.Look for The dough is glossy and covered with sesame seeds.Safe temperature 160°F (71°C) internal temperature (egg dishes)Tip Brushing the egg wash evenly gives a golden, shiny crust.
The dough circles should be about 6 inches across. After wrapping, the dough balls should be smooth and tightly sealed, with no cracks. The egg wash should cover the tops evenly, and the sesame seeds should stick well. The baking sheet should be lined with parchment paper to prevent sticking.
Baking and Serving
- Bake Until GoldenPlace the baking sheet in the preheated oven and bake for 20 minutes, until the dough is deep golden brown and the internal temperature of the dough reaches 190°F (88°C) if measured. The cheese should be melted and the filling hot. Remove from the oven and let cool on the baking sheet for 5 minutes before serving.Look for The buns are golden brown and sound hollow when tapped.Tip If the tops brown too quickly, loosely cover with foil for the last 5 minutes.
- Serve HotServe the stuffed cheeseburgers warm, whole or cut in half to show the melted cheese and juicy filling. Be careful of the hot cheese when biting in.Look for The cheese pulls and the juices soak into the bread.Tip Letting them rest for 5 minutes helps the cheese set slightly so it doesn't burn the mouth.
The buns should be golden brown and puffed. The kitchen will smell of fresh bread and melted cheese. Tap the bottom to hear a hollow sound. Let them cool for 5 minutes before serving to avoid burning mouths. The cheese should be melted and the filling hot.
Common mistakes
A common mistake is not sealing the dough tightly enough, which allows the cheese to leak out during baking. Make sure to pinch the edges firmly and press out any air pockets. Another issue is overfilling — if you add too much, the dough may tear.
Stick to one patty and a reasonable amount of cheese and onions. Also, don't skip the egg wash; it gives the buns their beautiful color. Finally, don't overbake, or the dough will become dry. Check at 18 minutes and adjust.
How to tell it’s done
The stuffed cheeseburgers are done when the dough is deep golden brown and sounds hollow when tapped on the bottom. The internal temperature of the dough should be at least 190°F (88°C) to ensure it's baked through.
The cheese should be fully melted and the filling hot. If you cut one open, the cheese should pull and the bread should be soft and fully cooked, not doughy. Let them cool for 5 minutes before serving to allow the cheese to set slightly.
