Tips for success
For the best results, use a kitchen scale to divide the dough into equal portions. This ensures even baking.
When rolling the dough, work from the center outward, rotating the dough as you go to maintain a round shape. If the dough shrinks back, let it rest for a few minutes before rolling again.
To ensure a tight seal, brush the edges with water rather than egg wash, as egg wash can make the dough slippery. Use a fork to press the edges firmly, creating a decorative crimp that also reinforces the seal.
If you have time, chill the assembled pockets in the refrigerator for 15 minutes before baking; this helps the dough hold its shape and prevents the filling from leaking.
Variations
- Bacon Cheddar: Add 2 slices of cooked bacon per pocket, crumbled over the beef before adding the cheese. The smoky flavor pairs beautifully with the caramelized onions and cheddar.
- Spicy Jalapeño: Add sliced pickled jalapeños to the filling for a spicy kick. Use pepper jack cheese instead of cheddar for extra heat and creaminess.
- Mushroom Swiss: Sauté sliced mushrooms until golden and mix with the caramelized onions. Use Swiss cheese instead of cheddar for a nutty, earthy flavor.
- BBQ Pulled Pork: Replace the ground beef with pulled pork tossed in barbecue sauce. Omit the pickles and use coleslaw as a topping for a Southern-inspired pocket.
Storage and make-ahead
- Fridge
- Refrigerate leftover pockets in an airtight container for up to 3 days. Reheat in a 350°F (175°C) oven for 10 minutes.
- Freezer
- Freeze unbaked pockets on a baking sheet until solid, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 10-15 minutes.
- Reheat
- Reheat baked pockets in a 350°F (175°C) oven for 10 minutes, or until heated through.
Store leftover pockets in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 10 minutes, or until warmed through. The brioche will crisp up again, and the cheese will remelt. Avoid microwaving, as it can make the dough soggy.
You can assemble the pockets up to a day ahead. Place them on the baking sheet, cover with plastic wrap, and refrigerate.
When ready to bake, brush with egg wash and sprinkle with sesame seeds just before putting them in the oven. You may need to add a few minutes to the baking time if the pockets are cold.
Serving ideas
Serve the burger pockets warm, either whole or sliced in half to show off the filling. They are great on their own, but you can also serve them with a side of ketchup, mustard, or a creamy dipping sauce. For a complete meal, add a simple green salad or some crispy fries.
These pockets are perfect for casual dinners, parties, or game-day snacks. They can be eaten by hand, making them ideal for kids and adults alike.
Slice them open just before serving to let the cheese flow, and watch everyone dig in. They pair well with a cold beer or a sparkling lemonade.

Sealed Stuffed Burger Pockets with Caramelized Onions

Ingredients
- 1 lb prepared brioche dough (store-bought or homemade)
- 1 lb ground beef (80% lean)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup caramelized onions (from about 2 large onions)
- 1/2 cup dill pickle slices
- 4 slices cheddar cheese
- 1 tbsp toasted sesame seeds
- 1 egg wash (1 egg beaten with 1 tbsp water)
Instructions
- On a lightly floured surface, roll the brioche dough into a 12-inch circle about 1/4 inch thick. Use a 6-inch round cutter or a small bowl to cut out 4 equal rounds. Reroll scraps as needed. In a bowl, season the ground beef with salt and pepper and mix gently. Divide the beef into 4 equal patties, each about 1/2 inch thick and slightly smaller than the dough rounds.
- Place one beef patty in the center of each dough round. Top each patty with 1/4 cup of caramelized onions, a few pickle slices, and one slice of cheddar cheese. Leave a 1-inch border of dough clear around the filling so the edges can be sealed.
- Brush the edges of each dough round with a little water. Fold the dough over the filling to create a half-moon shape, pressing the edges firmly to seal. Use a fork to crimp the edges for a decorative and secure closure. Place the pockets on a parchment-lined baking sheet, seam side up or down as preferred.
- Heat the oven to 350°F (175°C). Brush the tops of the pockets with the egg wash, covering all exposed dough. Sprinkle the toasted sesame seeds evenly over the tops. This will give the pockets a glossy, golden finish.
- Bake the pockets for 20 to 25 minutes, until the dough is puffed and deeply golden brown. The internal temperature of the beef should reach 160°F (71°C). If the tops brown too quickly, tent loosely with foil.
- Remove the pockets from the oven and let them rest on the baking sheet for 5 to 10 minutes. This allows the juices to redistribute and the cheese to set slightly. Serve warm, slicing open each pocket to reveal the molten cheese and juicy beef.
