Tips for success
For the crispiest exterior, use a heavy-bottomed skillet and make sure it's thoroughly preheated before adding the batter. The butter should be foaming but not browned.
If the pancake browns too quickly, reduce the heat to prevent burning while the inside cooks through. Letting the pancake rest after cooking helps the layers set and makes slicing cleaner.
When flipping, use a wide spatula and slide it under the pancake confidently. If needed, use two spatulas for support. If the pancake tears, it will still taste delicious—just patch it with a little extra batter and cook for another minute.
For even cooking, press down gently with the spatula after flipping to ensure the second side makes full contact with the pan.
Variations
- Spicy Kick: Add a finely chopped fresh chili or a teaspoon of red pepper flakes to the filling for extra heat. You can also use a spicy pepper jack cheese instead of kashar for a bolder flavor.
- Vegetarian Version: Omit the sucuk and increase the bell peppers to a full cup. Add sautéed mushrooms or spinach for a hearty vegetarian filling. Use a vegetarian cheese to keep it meat-free.
- Cheese Lover's: Mix the kashar cheese with an equal amount of mozzarella for an even more stretchy, gooey texture. Add a sprinkle of grated Parmesan on top before serving for a savory finish.
- Breakfast Style: Add a handful of cooked, crumbled bacon or sausage to the filling along with the sucuk. Serve with a fried egg on top for a hearty breakfast that will keep you full all morning.

Serving ideas
Slice the pancake into thick wedges and serve warm, pulling the wedges apart to show the gooey cheese stretch.
It pairs well with a side of fresh greens, a dollop of yogurt, or a drizzle of hot sauce for extra heat. This pancake is substantial enough to be a main course for breakfast or brunch.
For a complete meal, serve alongside a simple tomato salad or roasted potatoes. The pancake also makes a great party appetizer if cut into smaller wedges. Enjoy it with a cup of Turkish tea or coffee for an authentic touch.

Sausage & Cheese XXL Savory Pancake

Ingredients
- 2 large eggs
- 1 cup warm water (200ml)
- 1 cup warm milk (200ml)
- 50 ml vegetable oil
- 1 tsp salt
- 1 tsp dry yeast
- 1 tsp baking powder
- 2 1/2 cups all-purpose flour
- black pepper, to taste
- 1/2 cup finely diced Turkish sucuk sausage
- 1/2 cup diced bell peppers
- 1 cup shredded kashar cheese
- 2 tbsp butter, for the skillet
Instructions
- In a large bowl, whisk the eggs, warm water, warm milk, vegetable oil, salt, dry yeast, and baking powder until well combined. Gradually add the all-purpose flour and a pinch of black pepper, whisking continuously to create a smooth, pourable batter with no lumps. Let the batter rest for 15 minutes to activate the yeast.
- Cover the bowl with a clean kitchen towel and let the batter rest at room temperature for 15 minutes. This allows the yeast to work and the gluten to relax, resulting in a more tender pancake.
- Place a 10-inch skillet over medium heat and add the butter. Let it melt and foam, swirling to coat the bottom evenly. The pan should be hot but not smoking.
- Ladle about two large ladles of the rested batter into the hot skillet, tilting the pan to spread it into an even circle. Cook for 1–2 minutes until the bottom is set and lightly golden.
- Evenly scatter the diced sucuk, bell peppers, and shredded kashar cheese over the pancake, leaving a small border around the edges. The filling should cover the surface but not overflow.
- Pour a thin layer of the remaining batter over the filling, using the back of a spoon or a spatula to spread it gently. The batter should just cover the filling, enclosing it completely.
- Cook over medium heat for about 4 minutes, until the top batter is set and bubbles appear on the surface. The bottom should be deep golden brown and crisp.
- Carefully flip the pancake using a wide spatula. Cook for another 3–4 minutes until the second side is bronzed and the cheese is fully melted. The internal temperature of the filling should reach 160°F (71°C) to ensure the sucuk is cooked through.
- Transfer the cooked pancake to a cutting board and let it rest for 2–3 minutes. This allows the cheese to set slightly and makes slicing easier.
- Cut the pancake into thick wedges. Pull the wedges apart to reveal the gooey cheese stretch and serve warm.
