Before you start

Before starting, make sure the pistachios are shelled and ready to chop. Have a baking sheet lined with parchment paper. If using a double boiler, fill the bottom pot with water and bring to a simmer.

If using a microwave, have a microwave-safe bowl ready. Break the honeycomb candy into small chunks if it's not already broken. Measure all ingredients before you begin.

Ingredients at a glance (4)
  • 1 cup shelled pistachios
  • 16 oz 72% dark chocolate, finely chopped
  • 1 1/2 cups honeycomb candy, broken into chunks
  • 1/2 tsp flaky sea salt

Instructions

Prep and Melt

  1. Prep the Pistachios
Place the pistachios on a cutting board. Using a sharp chef's knife, slice across the nuts to chop them into small, uneven pieces. Some larger pieces are fine for texture. Set aside.
Look for Pistachios are chopped into small pieces with some larger chunks remaining.
Tip Chop the pistachios just before using to keep them crunchy.
  2. Grate the Chocolate
Take the block of 72% dark chocolate and grate it on a box grater into a clean bowl. This creates a pile of fine chocolate shavings that will melt evenly.
Look for You have a fluffy pile of grated dark chocolate.
Tip Chill the chocolate block for 10 minutes before grating if it starts to soften.
  3. Melt the Chocolate
Melt the grated chocolate gently. Use a double boiler or microwave in 30-second bursts, stirring between each, until smooth and glossy. Do not overheat.
Look for Chocolate is completely melted and shiny.
Tip If using a microwave, stop while a few lumps remain and stir to finish melting.

At the end of this phase, you should have a bowl of chopped pistachios, a bowl of grated chocolate, and melted chocolate that is smooth and glossy.

The pistachios should be roughly chopped with some larger pieces for texture. The chocolate should be fully melted with no lumps. The kitchen should smell of rich chocolate.

Assemble the Bark

  1. Spread the Chocolate
Line a baking sheet with parchment paper. Pour the melted chocolate onto the center and spread it with a spatula into an even rectangle, about 1/4 inch thick.
Look for Chocolate forms a smooth, even layer on the parchment.
Tip Use an offset spatula for the smoothest, most even layer.
  2. Add the Toppings
While the chocolate is still wet, scatter the honeycomb candy chunks evenly over the surface. Then sprinkle the chopped pistachios over the top, pressing them gently into the chocolate.
Look for Honeycomb and pistachios are evenly distributed across the chocolate.
Tip Work quickly so the chocolate doesn't set before toppings stick.
  3. Season with Salt
Finish by sprinkling the flaky sea salt over the entire bark. This balances the sweetness and adds a salty crunch.
Look for Salt flakes are visible on the surface.
Tip Use flaky salt for best texture; it dissolves less than fine salt.

The chocolate is spread evenly on the parchment, about 1/4 inch thick. Honeycomb and pistachios are scattered over the top, and the flaky salt is sprinkled on. The toppings should be evenly distributed and gently pressed into the chocolate. The surface looks textured and inviting, with the honeycomb and nuts visible.

Set and Break

  1. Set the Bark
Let the bark set at room temperature until completely firm, about 1 hour. Do not refrigerate unless you are in a hurry; room temperature setting gives a better snap.
Look for The bark is firm and no longer soft to the touch.
Tip If the room is warm, refrigerate for 20 minutes to speed setting.
  2. Break into Bars
Once set, lift the bark from the baking sheet using the parchment. Use a sharp knife to slice into thick bars, or simply break it into irregular pieces. Serve immediately.
Look for The bark snaps cleanly when broken, revealing a layered interior.
Tip For clean cuts, score the bark with a knife before it fully sets.

The bark is completely set and firm. When you lift it, it holds its shape. Breaking it produces a clean snap, revealing a layered interior with glossy chocolate, airy honeycomb, and nutty pistachio pieces. The bars are thick and have a satisfying crunch. The aroma is a mix of chocolate, honey, and toasted nuts.

Common mistakes

One common mistake is overheating the chocolate, which can cause it to seize or become dull. Always melt gently and stir frequently. Another mistake is adding toppings before the chocolate is spread evenly, which can cause them to clump.

Make sure the chocolate is spread in an even layer first. Finally, do not refrigerate the bark for too long, as this can cause condensation and a less crisp snap.

How to tell it’s done

The bark is done when it is completely set and firm to the touch. It should not flex when lifted. When broken, it should snap cleanly rather than bend.

The interior should show distinct layers of chocolate, honeycomb, and pistachios. If the chocolate is still soft, let it set longer. The bark is ready to serve once it breaks with a clean snap.
