Before you start

Before starting, ensure all vegetables are properly cleaned and prepped. Leeks should be washed thoroughly to remove any dirt. Peel and slice the carrots into consistent rounds to ensure they cook at the same rate.

Have the measuring cups ready and ensure the slow cooker is placed on a heat-resistant surface near a power outlet. Having all ingredients measured and ready to go makes the assembly process seamless and quick.

Ingredients at a glance (5)
  • 1 cup green lentils, rinsed
  • 2 cups leeks, cleaned and sliced
  • 2 cups carrots, peeled and sliced
  • 1 cube poultry bouillon cube
  • 4 cups water

Instructions

Layering the ingredients

  1. Prepare the slow cooker
Place the rinsed green lentils at the bottom of the slow cooker. Add the sliced leeks and carrots on top of the lentils to ensure even distribution of flavors as the soup cooks.
Look for Lentils should be spread evenly across the base.
Tip Rinse the lentils under cold water to remove any debris before adding them to the cooker.

The slow cooker base should be covered with a layer of lentils, topped with sliced leeks and carrots. Ensure the ingredients are arranged in a way that allows the bouillon to distribute evenly during the cooking process.

Adding liquid and seasoning

  1. Season and add liquid
Crumble the poultry bouillon cube over the vegetables. Pour the water over the mixture, ensuring the cube is partially dissolved and the ingredients are submerged.
Look for Water should cover the ingredients completely.
Tip Use warm water to help the bouillon cube dissolve faster during the initial heating phase.

The bouillon cube is crumbled over the vegetables and covered with water. The mixture should look organized, with the bouillon pieces visible before the lid is placed on the slow cooker to begin the cooking cycle.

Final cooking stage

  1. Cook and serve
Cover and cook on low for 4 hours until the lentils are tender and the vegetables are soft. Ensure the final soup temperature reaches 165°F (74°C) to confirm the poultry bouillon is fully incorporated and the dish is thoroughly heated through.
Look for Lentils are tender and the broth is aromatic.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Stir the soup gently before serving to achieve a consistent, rustic texture.

After four hours, the soup should be steaming with a rustic, textured appearance.

The lentils will be soft, the vegetables tender, and the broth will have a rich, savory aroma indicating that the dish is ready to be served.

Common mistakes

A common mistake is failing to rinse the lentils, which can introduce dust or debris into the soup. Another error is not cleaning the leeks properly; grit in the final dish significantly impacts the texture.

Avoid adding too much water initially; it is easier to thin the soup later than to thicken it. Finally, do not overcrowd the slow cooker, as this can lead to uneven cooking and prevent the flavors from melding correctly.

How to tell it’s done

The soup is ready when the green lentils are tender but not mushy, and the carrots can be easily pierced with a fork. The broth should be fragrant and slightly thickened from the starch of the lentils.

The internal temperature of the liquid should be at least 165°F (74°C) to ensure the bouillon is fully integrated and the soup is safe and ready to serve.

  • Poultry: 165°F (74°C) in the thickest part
