Tips for success
For the best texture, let the pork cook on low for the full 8 to 10 hours. The meat will be more tender and the sauce more developed than if you try to speed it up on high.
If you're short on time, aim for at least 6 hours on low. The pork should be so tender that it falls apart when you touch it with a fork.
To thicken the gravy, if it seems thin after shredding, remove the pork and whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water, then stir into the sauce and cook on high for 15 minutes.
But honestly, the sauce is usually perfect as-is—creamy and clinging. Taste and adjust salt and pepper before serving, as the au jus can vary in saltiness.
Variations
- Spicy Chipotle Pork: Add 2 chopped chipotle peppers in adobo sauce along with the au jus for a smoky, spicy kick. Reduce the Dijon to 2 tablespoons and add 1 teaspoon of smoked paprika. The heat balances the creamy sauce beautifully.
- Herb-Butter Pork: Instead of sour cream, use 4 tablespoons of softened butter mixed with 2 cloves of minced garlic and 1 tablespoon each of chopped rosemary and thyme. Spread over the roast before cooking. Omit the Dijon for a more buttery, herb-forward flavor.
- Apple Cider Pork: Replace the au jus with 1 cup of apple cider and add 1 sliced onion. The sweetness of the cider pairs with the Dijon and herbs. Omit the sour cream for a lighter sauce, or keep it for extra creaminess.
- Mushroom and Thyme Pork: Add 8 ounces of sliced cremini mushrooms along with the garlic and herbs. Use only thyme and skip the rosemary. The mushrooms add an earthy depth that complements the creamy Dijon sauce.

- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Store leftover pork in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much.
This recipe is perfect for meal prep. The pork can be cooked up to 2 days ahead and stored in the refrigerator. Reheat gently on the stovetop or in the slow cooker on warm. The sauce may separate slightly upon reheating, but a quick stir will bring it back together.
Serving ideas
Serve the pork over steamed white rice to soak up the creamy gravy. Mashed potatoes or egg noodles are also excellent choices. For a lighter option, serve it on a bed of greens or with roasted vegetables. The pork is rich and satisfying, so simple sides work best.
This dish is a complete meal in itself, but a side of crusty bread or a simple green salad with a lemon vinaigrette would round it out beautifully.
The tangy Dijon and sour cream sauce pairs well with acidic, fresh flavors. For a family-style dinner, place the slow cooker on the table and let everyone serve themselves.

Rosemary Thyme Dijon Cream Pork Sirloin Roast: Slow-Cooker Comfort

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 12 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1/2 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup beef au jus
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Scatter the smashed garlic cloves and fresh rosemary and thyme sprigs over the top of the roast, tucking some underneath for even flavor.
- Dollop the sour cream and whole-grain Dijon mustard over the roast, spreading them slightly with a spoon. Pour the beef au jus along the side of the pot, not directly over the herbs, to keep the top seasoned.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, until the pork is fork-tender and shreds easily. Do not open the lid during the first 6 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the pork is fork-tender, transfer it to a cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any large fat pieces. The roast should pull apart easily. Let it rest for 3 minutes before slicing.
- Return the shredded pork to the slow cooker and stir gently to coat with the pan gravy. Let it sit in the warm sauce for 10 minutes so the meat absorbs the flavors. Let it rest for 3 minutes before slicing.
- Let the pork rest in the slow cooker for at least 3 minutes before serving. This allows the juices to redistribute, keeping the meat moist.
- Spoon steamed white rice onto serving plates. Top with a generous mound of the shredded pork and ladle extra gravy over the top. Serve hot.
