Tips for success

For the most flavorful results, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker.

This adds a deep, caramelized crust that enhances the overall taste. While the video doesn't show this step, it's a common pro technique that works well with this recipe.

If you prefer a thicker sauce, remove the pork after shredding, then simmer the sauce on the stovetop or set the slow cooker to HIGH and let it reduce for 15-20 minutes.

You can also stir in a slurry of cornstarch and water to thicken quickly. Adjust the seasoning with salt and pepper to taste.

Variations

  • Spicy Kick: Add 1-2 chopped chipotle peppers in adobo sauce along with the mustard for a smoky heat. Or stir in 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper with the other seasonings.
  • Herb Swap: Replace rosemary and thyme with fresh oregano and sage for a different aromatic profile. Use about 4 sprigs of oregano and 6 sage leaves. This pairs well with the Dijon and cream.
  • Apple Cider Twist: Replace half of the au jus with apple cider or apple juice. The sweetness of the cider complements the pork and adds a subtle fruitiness to the sauce. Reduce the sour cream to 3/4 cup to balance the extra liquid.
  • Smoky BBQ: Swap the Dijon mustard for 1/4 cup of your favorite barbecue sauce and add 1 teaspoon of liquid smoke. Omit the sour cream and instead stir in 1/2 cup of cream cheese at the end for a creamy BBQ sauce.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water to restore the sauce's consistency.
Freezer
Freeze shredded pork in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat or in the microwave in 30-second intervals, stirring occasionally. Add a little broth or water to keep it moist.

Store leftover pork in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in a saucepan over medium-low heat, adding a splash of broth or water to loosen the sauce if needed.

This dish is ideal for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed. You can also cook the pork fully, shred it, and store it in the refrigerator for up to 4 days or freeze for later.

Serving ideas

Serve the shredded pork over steamed white rice, spooning the creamy sauce on top. The rice soaks up the flavorful liquid, making every bite satisfying.

For a low-carb option, serve over cauliflower rice or alongside roasted vegetables. A sprinkle of fresh parsley or chives would add color, though not necessary.

This pork also makes excellent sandwiches. Pile it onto soft buns or slider rolls, and top with a spoonful of the sauce. Add a crisp slaw for crunch, if desired. For a heartier meal, serve with mashed potatoes or crusty bread to mop up the sauce.

Frequently asked questions

Can this be made ahead and reheated?
Yes, this pork shoulder is perfect for making ahead. Cook it as directed, shred it, and store it in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to keep it moist. The flavors actually improve after a day in the fridge.
Why does the sauce look curdled?
The sour cream can sometimes separate if the slow cooker is on high heat or if it's stirred too vigorously. To prevent this, use the low setting and avoid stirring during cooking. If the sauce does curdle, whisk in a tablespoon of Dijon mustard or a splash of heavy cream to help smooth it out.
Can this recipe be made with a different cut of pork?
Yes, you can use a pork butt or picnic roast, both of which are well-marbled and ideal for slow cooking. If using a leaner cut like pork loin, reduce the cooking time to 6-8 hours on low to avoid drying out. The internal temperature should still reach at least 145°F (63°C) for safety, but for shredding, aim for 200°F (93°C).
Is it necessary to sear the pork before slow cooking?
Searing is not required, but it adds a deeper flavor through the Maillard reaction. If you have time, heat a skillet with oil and brown the pork on all sides for about 2-3 minutes per side. This step is optional and not shown in the video, but it enhances the final taste.
What can be used instead of au jus?
Low-sodium beef broth or chicken broth are excellent substitutes. For a richer flavor, use a combination of beef broth and a splash of Worcestershire sauce. You can also use a store-bought au jus mix prepared according to package directions, but check the sodium content.

Rosemary Thyme Dijon Cream Pork Shoulder

Prep 10 minCook 8 hRest 10 minTotal 8 h 20 minServes 8
Slow cooker pork shoulder with creamy Dijon sauce, garlic, and fresh herbs in a black crockpot

Ingredients

  • 4 lb boneless pork shoulder roast
  • 12 cloves garlic, smashed
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 1 cup sour cream
  • 1/4 cup whole-grain Dijon mustard
  • 1 cup beef au jus

Instructions

  1. Place the pork shoulder in the center of the slow cooker insert. Scatter the smashed garlic cloves over the top, then lay the fresh rosemary and thyme sprigs over the meat.
  2. Dollop the sour cream and the whole-grain Dijon mustard over the pork. Pour the au jus along the side of the insert, not directly over the meat, so the seasonings stay in place.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for pulled pork, cook until it reaches 200°F (93°C) for ideal shreddability. Let the pork rest in the juices for 10 minutes before shredding.
  4. Using two forks, shred the pork directly in the slow cooker, mixing it with the garlic and herbs. Stir the creamy pan sauce into the shredded meat. Serve over steamed rice, spooning extra sauce on top.
