Tips for success
For the best flavor, choose a root beer that is not too spicy or herbal; a classic, sweet root beer works perfectly.
If you want a thicker glaze, after removing the ribs, you can simmer the remaining sauce on the stovetop in a saucepan to reduce it further. This extra step intensifies the flavor and makes a beautiful glossy finish.
Leftover sauce can be stored in the refrigerator and used as a dipping sauce or for future ribs.
When reheating, add a splash of water or root beer to loosen the sauce if it has thickened too much. The ribs themselves reheat well, and the sauce only gets better the next day.
Variations
- Spicy Kick: Add 1-2 minced chipotle peppers in adobo sauce to the barbecue sauce before pouring over the ribs. The smoky heat complements the sweetness of the root beer and onion.
- Honey Garlic: Replace the honey hickory sauce with a honey garlic barbecue sauce and add 2 minced garlic cloves to the slow cooker. The garlic adds a savory note that pairs well with the root beer.
- Smoky Bourbon: Substitute 1/2 cup of the root beer with bourbon and use a smoky barbecue sauce. The bourbon adds depth and a subtle oakiness, making the ribs taste like they came from a BBQ joint.
- Cola Variation: If root beer is unavailable, use a cola like Coca-Cola or Pepsi. The caramel notes in cola work similarly, and you can add a splash of vanilla extract for extra complexity.

This recipe is perfect for making ahead. Cook the ribs as directed, then cool and refrigerate. The flavors meld even more overnight. Reheat in a 300°F (150°C) oven covered with foil for about 20 minutes, or until heated through.
Serving ideas
Serve the ribs with classic sides like coleslaw, cornbread, or mashed potatoes. The sweet and smoky glaze pairs well with tangy pickles or a crisp green salad.
For a heartier meal, serve over rice or with roasted vegetables. The sauce is also delicious drizzled over the sides.
For a casual gathering, set out the ribs on a platter with extra sauce on the side and let everyone help themselves.
These ribs are also great for sandwiches—pile the meat on a bun with a bit of coleslaw for a barbecue sandwich. However you serve them, they'll be the star of the table.

- 3 lb boneless country-style pork ribs
- 1 medium sweet onion, diced
- 1 1/2 cups root beer
- 1 cup honey hickory barbecue sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-7 quart slow cooker. Scatter the diced sweet onion over the ribs. Pour the root beer around and over the meat and onions.
- Squeeze the honey hickory barbecue sauce generously over the entire surface of the ribs, spreading it with a spoon to coat the meat evenly.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the ribs are fork-tender and easily pull apart. Do not open the lid during cooking to maintain heat. Let it rest for 3 minutes before slicing.
- Test the ribs with a fork; they should be very tender and nearly falling apart. If not done, continue cooking for 30-minute intervals. Let the ribs rest for at least 3 minutes before serving.
- Using a fork, lift the ribs out of the slow cooker and place them on a serving platter or individual plates. Spoon some of the glaze and onions over the top.
