Tips for success
For the best flavor, choose a BBQ sauce you love eating straight from the jar—it's the backbone of the dish. If you prefer a spicier kick, add a teaspoon of chipotle powder or a dash of hot sauce to the slow cooker before cooking.
To make the ribs even more caramelized, you can broil them for 2-3 minutes after cooking: place the ribs on a baking sheet, brush with the thickened sauce, and broil until charred at the edges.
Leftover sauce is fantastic drizzled over roasted vegetables or used as a dipping sauce for fries. If you have extra time, searing the ribs in a hot skillet before adding them to the slow cooker adds a deeper, smoky flavor.
For a thicker sauce without a saucepan, remove the ribs and stir in 1 tablespoon cornstarch mixed with 2 tablespoons water, then let it cook on high for 15 minutes.
Variations
- Spicy Root Beer Ribs: Add 1-2 chopped chipotle peppers in adobo sauce to the slow cooker along with the other ingredients. The smoky heat balances the sweetness of the root beer and BBQ sauce.
- Honey Garlic Ribs: Replace the root beer with 1/2 cup honey, 1/4 cup soy sauce, and 1/4 cup water. Add 4 minced garlic cloves and omit the BBQ sauce for a sticky, savory glaze.
- Cherry Cola Ribs: Swap the root beer for cherry cola and use a smoky BBQ sauce. The cherry flavor adds a fruity depth that pairs beautifully with pork.
- Dr Pepper Ribs: Use Dr Pepper instead of root beer for a slightly spicier, more complex soda flavor. Add a tablespoon of Worcestershire sauce for extra umami.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water if the sauce has thickened too much.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F oven for 15-20 minutes, or in the microwave in 30-second bursts, until hot and bubbly.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently in the microwave or on the stovetop, adding a splash of water or root beer to loosen if needed.
This recipe can be prepared entirely ahead of time. Cook the ribs, let them cool completely, and store in the refrigerator for up to 3 days. Reheat in a 350°F oven or in the slow cooker on low until warmed through. The flavors meld even more after a day in the fridge.
Serving ideas
Serve the ribs on a platter with the caramelized onions spooned over the top. A side of creamy coleslaw, cornbread, or baked beans rounds out the meal.
For a low-carb option, serve over cauliflower rice or alongside a crisp green salad. The sweet-savory flavor pairs well with pickles or pickled red onions to cut through the richness.
These ribs are perfect for casual gatherings—set out a stack of napkins and let everyone dig in. For a family dinner, pair with mashed potatoes to soak up the extra sauce.
If you have leftovers, shred the meat and pile it onto buns for incredible BBQ sandwiches. The sauce is so good you'll want it on everything.

Root Beer BBQ Country Ribs: Easy Crockpot Dinner

Ingredients
- 3 lb boneless country-style pork ribs
- 1 cup diced sweet onion
- 12 fl oz root beer
- 1 1/2 cups thick Kansas City-style BBQ sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer if possible. Scatter the diced sweet onion evenly over the ribs. Pour the root beer around and over the meat, then drizzle the thick BBQ sauce over the top, covering the ribs and onions as much as possible.
- Cover the slow cooker with its lid. Cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the ribs are fork-tender and easily pull apart. The sauce will thicken and the onions will caramelize as the ribs cook. Let it rest for 3 minutes before slicing.
- Once the ribs are tender, turn off the slow cooker. Using tongs or a fork, carefully transfer the ribs to a cutting board. Let them rest for at least 3 minutes before serving. This allows the juices to redistribute, keeping the meat moist.
- If the sauce is thinner than desired, pour it into a small saucepan and bring to a simmer over medium heat. Cook for 5 to 10 minutes, stirring occasionally, until it reduces and thickens to a syrupy consistency.
- Place the rested ribs on a serving platter. Spoon the thickened sauce and caramelized onions over the top. Serve hot, with extra sauce on the side if desired.
