Tips for success

For the smoothest bisque, use an immersion blender directly in the pot. If using a countertop blender, work in batches and never fill it more than halfway with hot liquid.

Blend on low first, then increase speed. The soup should be completely smooth with no visible pieces of tomato or onion. Taste and adjust seasoning with salt and pepper after blending.

When grilling the sandwiches, use a good amount of butter on the outside of the bread for a golden, crispy crust. Cook over medium heat, flipping once, until both sides are deeply browned and the cheese is melted.

If the bread browns too quickly, lower the heat. Let the sandwiches rest for a minute before slicing to keep the cheese from running out.

Variations

  • Smoked Paprika: Add 1 teaspoon smoked paprika along with the onions for a subtle smoky depth. This pairs beautifully with the roasted garlic and adds a warm, earthy note to the bisque.
  • Spicy Kick: Stir in a pinch of red pepper flakes or a dash of hot sauce when adding the tomatoes. For extra heat, add a finely chopped fresh chili with the onions.
  • Herb Swirl: Instead of basil, use fresh thyme or oregano in the bisque. Garnish with a dollop of pesto or a drizzle of olive oil for an herby finish.
  • Vegan Version: Replace the butter with olive oil, use a plant-based heavy cream, and choose a dairy-free cheese alternative for the dippers. Use vegan butter for grilling. The texture will be slightly different but still delicious.

Storage and make-ahead

Fridge
Store leftover bisque in an airtight container in the refrigerator for up to 3 days. Keep dippers separately in the fridge for up to 2 days.
Freezer
The bisque freezes well for up to 3 months. Cool completely, then transfer to a freezer-safe container. Thaw overnight in the fridge and reheat gently.
Reheat
Reheat bisque on the stovetop over low heat, stirring occasionally, until hot. Reheat dippers in a toaster oven or skillet at 350°F (175°C) until crisp.

Leftover bisque can be stored in an airtight container in the refrigerator for up to 3 days. The dippers are best enjoyed fresh but can be stored separately in the refrigerator for up to 2 days.

Reheat the bisque gently on the stovetop, adding a splash of broth or cream if needed to thin it. The dippers can be reheated in a toaster oven or skillet to restore crispness.

Roast the garlic up to 3 days ahead and keep it wrapped in foil in the refrigerator. You can also prepare the bisque base (without the cream and basil) a day ahead, then reheat and finish with cream and basil just before serving.

The dippers are best made fresh, but you can assemble the sandwiches earlier and grill them when ready.

Serving ideas

Serve the bisque hot in deep bowls, with a swirl of cream and a few fresh basil leaves on top. Arrange the Gruyère sourdough dippers on a plate or alongside the bowl for dipping. For a heartier meal, consider adding a simple green salad or a side of roasted vegetables.

This dish is perfect for a cozy lunch or dinner. The contrast between the smooth, warm bisque and the crunchy, cheesy dippers is irresistible. For a fun presentation, serve the dippers standing upright in the bowl, or cut them into smaller pieces for easy dipping. Enjoy every bite.

Frequently asked questions

Can this bisque be made ahead of time?
Yes, the bisque can be made up to 2 days ahead. Prepare the soup without the cream and basil, let it cool, and refrigerate. When ready to serve, reheat gently, then stir in the cream and basil. The dippers are best made fresh, though the sandwiches can be assembled a few hours ahead and grilled just before serving.
Why does the cream sometimes separate in tomato soup?
Cream can separate if the soup is boiled after adding it. The high heat causes the fat to break from the liquid. To avoid this, always add the cream off the heat and then warm the soup gently over low heat, stirring constantly. Do not let it boil.
Can you use regular canned tomatoes instead of San Marzano?
Yes, any good-quality whole peeled tomatoes will work. San Marzano tomatoes are sweeter and less acidic, but regular tomatoes can be used. If the soup tastes too acidic, add a pinch of sugar to balance it.
What can you use instead of Gruyère cheese?
Gruyère can be replaced with Swiss cheese, fontina, or sharp white cheddar. These cheeses melt well and have a similar nutty flavor. For a stronger taste, try aged gouda or raclette.
How do you get the dippers extra crispy?
Use a generous amount of butter on the outside of the bread and cook over medium heat. Press the sandwiches gently with a spatula to ensure even browning. Cook until the bread is deep golden and the cheese is melted. Let them rest for a minute before slicing to keep the crispness.

Roasted Garlic Tomato Bisque with Grilled Gruyère Sourdough Dippers

Prep 15 minCook 35 minTotal 50 minServes 4
A bowl of roasted garlic tomato bisque with a grilled Gruyère sourdough dipper being dunked into the soup.

Ingredients

  • 2 cans (28 oz each) whole peeled San Marzano tomatoes
  • 1 whole head garlic
  • 1 yellow onion, chopped
  • 2 tbsp olive oil
  • 30 g butter
  • 200 ml heavy cream
  • 250 ml vegetable broth
  • 1 tbsp fresh basil, chopped
  • 4 slices thick sourdough bread
  • 150 g Gruyère cheese, shredded

Instructions

  1. Heat the oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with a little olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized. While the garlic roasts, heat the olive oil and butter in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, for 5–7 minutes until translucent and just starting to brown.
  2. Once the garlic is roasted, let it cool slightly, then squeeze the cloves from the skins into the pot with the onions. Add the whole peeled San Marzano tomatoes with their juices and the vegetable broth. Stir to combine, breaking up the tomatoes with a spoon. Bring the mixture to a simmer and cook for 20 minutes, allowing the flavors to meld and the tomatoes to soften.
  3. Remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth. Alternatively, carefully transfer the mixture to a countertop blender in batches and blend until silky. Return the pureed soup to the pot.
  4. Place the pot back over low heat. Pour in the heavy cream and stir until fully incorporated. Add the chopped fresh basil and stir gently. Let the bisque warm through for 2–3 minutes, but do not let it boil. Season with salt and pepper to taste.
  5. Heat a large skillet or griddle over medium heat. Butter one side of each sourdough slice. Place four slices buttered-side down on a plate. Divide the shredded Gruyère cheese evenly among them. Top with the remaining sourdough slices, buttered-side up.
  6. Carefully place the sandwiches in the hot skillet. Cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is deep golden brown and crispy and the cheese is fully melted. Adjust the heat as needed to prevent burning.
  7. Transfer the grilled sandwiches to a cutting board. Let them rest for 1 minute, then slice each sandwich into 1-inch-wide strips to create dippers.
  8. Ladle the hot bisque into bowls. Add a swirl of extra cream on top if desired and sprinkle with a few fresh basil leaves. Serve immediately with the warm Gruyère sourdough dippers alongside for dipping.
