Tips for success
For a more complex flavor profile, consider adding a pinch of freshly cracked black pepper or a small amount of sea salt to the garlic butter before rubbing it onto the onions. If you prefer a deeper, nuttier flavor, you can lightly toast the garlic in the butter for a minute before applying it, but be careful not to let the garlic brown too much as it will continue to roast in the oven.
When choosing fresh herbs, feel free to experiment with what is available. While parsley, chives, and thyme are a classic combination, rosemary or tarragon can also work beautifully depending on the main course you are pairing these onions with.
Just remember that hardier herbs like rosemary should be chopped very finely to ensure they don't become woody or overpowering in the final creamy sauce.
Variations
- Balsamic Glazed Version: Drizzle a small amount of balsamic glaze over the onions before roasting to introduce a pleasant acidity that cuts through the richness of the butter and cream.
- Cheesy Topped Onions: Sprinkle a generous amount of grated Parmesan or Gruyère cheese over the onions during the final five minutes of roasting for a savory, golden crust.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Ensure the onions are fully cooled before refrigerating.
- Reheat
- Reheat gently in a low-temperature oven or on the stovetop over low heat until warmed through, adding a splash of cream if the sauce has thickened too much.
Allow any leftover roasted onions to cool completely to room temperature before transferring them to an airtight container. Keep the sauce with the onions to prevent them from drying out in the refrigerator.
Proper storage in the refrigerator will maintain the quality of the dish for up to three days. Always ensure the container is sealed tightly to prevent the strong aroma of the onions from permeating other items in your fridge.
These onions can be partially prepared in advance. You can roast the onions earlier in the day and keep them at room temperature for up to two hours, or refrigerate them if longer.
When ready to serve, simply add the cream and herb mixture and finish the roasting process in the oven as directed. This makes the dish an excellent choice for stress-free entertaining, as the final step is quick and requires minimal effort.
Serving ideas
Serve these roasted onions hot, directly from the baking dish or plated individually. They make an exceptional side dish for roasted meats, grilled steaks, or even as a vegetarian main course served alongside a fresh green salad and crusty bread.
The creamy sauce is perfect for dipping bread into, so ensure there is plenty of crusty baguette on the table to capture every bit of the flavorful, herb-infused cream.
When plating, use a large spoon or offset spatula to carefully lift each onion half, ensuring you scoop up a generous amount of the creamy herb sauce from the bottom of the dish. A light sprinkle of fresh, chopped herbs as a final garnish can add a vibrant pop of color and freshness to the finished plate. Serve immediately while the sauce is still warm and the onions are at their most tender.

Roasted Garlic Butter Onions with Creamy Herb Sauce

Ingredients
- 4 large yellow onions, peeled and halved
- 4 tbsp unsalted butter, softened
- 4 cloves garlic, minced
- 1/2 cup creamy herb sauce, made beforehand
Instructions
- Preheat the oven to 400°F (200°C). Arrange the peeled, halved onions in a ceramic baking dish. In a small bowl, mix the softened butter with minced garlic. Rub the garlic butter generously over the cut sides of the onions. Roast in the preheated oven for 35 to 40 minutes, or until the onions are golden brown and tender when pierced with a fork.
- Once the onions are roasted and tender, remove the baking dish from the oven. Carefully pour the pre-made creamy herb sauce into the bottom of the hot baking dish around the roasted onions. Return the dish to the oven for an additional 5 minutes to allow the sauce to warm through and thicken slightly from the residual heat of the roasted onions.
- Remove the baking dish from the oven and let it rest for 5 minutes. Using tongs, carefully lift each onion half onto a serving plate. Spoon the warm, creamy herb sauce from the dish over the top of the onions before serving immediately while hot.
