Tips for success
To elevate the flavor, consider adding a pinch of fresh herbs like parsley or chives over the marrow just before serving. The brightness of fresh herbs cuts through the heavy fat, creating a more balanced profile. You can also finish the marrow with a tiny splash of high-quality balsamic vinegar or a pinch of flaky sea salt to add a sophisticated depth to the final bite.
If you find the marrow is too rich, pair it with a small side of pickled vegetables or a sharp, acidic salad. The acidity acts as a palate cleanser, making each subsequent bite of marrow as delightful as the first. Always serve the bones on a stable surface and provide small spoons so guests can easily extract every bit of the marrow from the center of the bone.
Variations
- Herb-Crusted Marrow: Top the marrow with a mixture of finely chopped fresh parsley, minced garlic, and breadcrumbs before roasting. This adds a lovely herbaceous crust and extra texture to the dish.
- Spicy Marrow: Sprinkle a small amount of crushed red pepper flakes or a dash of chili oil over the marrow before roasting. The heat provides a nice contrast to the richness.
Storage and make-ahead
- Fridge
- Keep leftover marrow in the refrigerator for up to 2 days in a sealed container.
- Reheat
- Reheat the marrow gently in a low-temperature oven until just warmed through, though fresh is preferred.
Store any leftover marrow in an airtight container in the refrigerator for up to two days. Note that marrow is best enjoyed fresh; reheating it can alter its texture significantly.
The crostini should be stored separately in a dry, airtight container to maintain their crunch. If the bread loses its crispness, you can toast it briefly in a toaster oven to restore its texture before serving again.
You can prepare the crostini in advance and store them at room temperature in an airtight container for up to one day. However, the marrow itself should always be roasted fresh just before serving to ensure it is at the perfect temperature and texture.
Do not attempt to pre-roast the marrow as it will not reheat well and will lose the delicate, buttery quality that makes this dish special.
Serving ideas
Serve the roasted bones directly on a wooden board or a rustic platter to create an inviting, casual atmosphere. Place the toasted crostini in a small bowl or arranged neatly around the bones so guests can easily assemble their own bites.
Provide small, sturdy spoons for each guest to facilitate the scooping process, which is part of the overall experience of eating bone marrow.
Because this dish is quite rich, it is best served in moderate portions as an appetizer. It pairs exceptionally well with a glass of bold red wine or a crisp, dry sparkling wine, both of which provide enough structure and acidity to stand up to the intensity of the marrow.
Ensure that the crostini are warm or at room temperature when the marrow is served to maintain the ideal contrast.

Roasted Beef Bone Marrow with Toasted Garlic Crostini

Ingredients
- 4 pieces beef marrow bones, split lengthwise
- 1 loaf crusty bread, sliced
- 1 clove garlic, peeled
Instructions
- Preheat the oven to 450°F (230°C). Place the split beef marrow bones on a roasting pan with the marrow side facing up. Roast in the preheated oven for 15 to 20 minutes until the marrow is soft, bubbling, and glistening. The internal temperature of the marrow must reach 145°F (63°C). Once finished, remove from the oven and let the meat rest for at least 3 minutes.
- While the bones are roasting, place the bread slices on a baking sheet. Toast in the oven for about 5 minutes until golden brown and crunchy. Once toasted, remove from the oven and rub each slice with the raw garlic clove to infuse it with flavor.
- Arrange the roasted bones on a serving board alongside the prepared garlic crostini. Serve immediately with a small spoon for guests to scoop the warm, buttery marrow directly onto the crunchy toast.
