Before you start

Before you begin cooking, make sure all your ingredients are measured and ready to go. Chop the bacon into small, even pieces so they cook uniformly, and mince the garlic finely.

If you are using traditional lasagna noodles, boil them in salted water according to the package instructions, drain them, and lay them flat on parchment paper so they do not stick together. Shred your mozzarella and Parmesan cheeses, and set your baking dish nearby for assembly.

Ingredients at a glance (8)
  • 8 slices bacon, chopped
  • 4 cloves garlic, minced
  • 1 1/2 lb ground beef
  • 3 cups marinara sauce
  • 12 lasagna noodles, cooked
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

Sauce Preparation

  1. Cook the Bacon and Garlic
Place the chopped bacon in a large skillet over medium heat. Cook until the bacon becomes crispy and renders its fat, which takes about 5 to 7 minutes. Add the minced garlic during the last minute of cooking, stirring constantly to prevent burning, until it is highly fragrant.
Look for The bacon should be golden brown and crispy, and the garlic should smell sweet and fragrant without turning dark brown.
Tip Keep a close eye on the garlic as it can burn quickly in hot bacon fat.
  2. Brown the Beef and Simmer
Add the ground beef directly to the skillet with the bacon and garlic. Cook the beef, breaking it up with a wooden spoon, until it is fully browned and no longer pink. Drain any excess grease if desired, then pour in the marinara sauce. Stir well to combine and let the mixture simmer gently over low heat for 10 minutes to allow the flavors to meld.
Look for The sauce should be thick, bubbly, and rich with the beef fully incorporated.
Tip Simmering the sauce slowly helps deepen the savory garlic and bacon flavors throughout the beef.

At the end of this phase, the meat sauce should be thick, deeply fragrant, and rich. The bacon should be beautifully crispy, and the ground beef should be fully browned and simmered with the marinara sauce.

You will hear a gentle bubbling sound and smell the irresistible combination of garlic, smoky bacon, and sweet tomatoes before proceeding to assembly.

Assembly

  1. Assemble the Lasagna Layers
Preheat your oven to 375°F (190°C). Spread a thin layer of the prepared meat sauce at the bottom of a 9x13-inch baking dish. Place four cooked lasagna noodles on top of the sauce. Sprinkle a generous portion of shredded mozzarella cheese and grated Parmesan cheese over the noodles. Repeat this layering process twice more, ending with a final layer of noodles topped with the remaining meat sauce, mozzarella, and Parmesan.
Look for The layers should be evenly distributed with cheese covering the entire top surface.
Tip Press down gently on each noodle layer to compact the lasagna and prevent air pockets.

At this point, the lasagna should be completely assembled in the baking dish. The layers of pasta, rich meat sauce, and cheeses should be flat and evenly distributed, with a generous layer of mozzarella and Parmesan covering the very top. The dish is now ready to go into the preheated oven.

Baking

  1. Bake to Bubbly Perfection
Cover the baking dish loosely with aluminum foil to prevent the cheese from sticking. Bake in the preheated oven for 25 minutes. Remove the foil and bake uncovered for an additional 15 minutes, or until the cheese is melted, bubbly, and golden brown on top. Ensure the internal temperature of the ground meat layer reaches at least 160°F (71°C) before removing it from the oven. Garnish with chopped fresh parsley and extra crispy bacon bits.
Look for The lasagna is ready when the edges are vigorously bubbling and the cheese on top is beautifully browned.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Letting the lasagna rest for 15 minutes after baking makes it much easier to cut clean slices.

At the end of the baking process, the lasagna will have a beautifully golden, bubbly cheese crust with crispy edges. You should see hot sauce gently bubbling up along the sides of the dish. The aroma of baked cheese, garlic, and bacon will fill the kitchen, indicating the dish is cooked through and ready to rest.

Common mistakes

One of the most common mistakes when making lasagna is assembling it with excessively hot, watery sauce, which can cause the layers to slide apart when sliced. Always let your meat sauce simmer until it is thick and robust.

Another error is failing to let the lasagna rest after baking. Cutting into a piping hot lasagna immediately will result in a messy, unstructured plate. Giving it fifteen minutes to cool slightly allows the cheeses and structure to set beautifully.

How to tell it’s done

To ensure your lasagna is perfectly done and safe to eat, the cheese on top should be completely melted, golden brown, and bubbling vigorously at the edges.

Most importantly, because this dish contains ground beef, you must verify that the internal temperature of the center meat layer reaches at least 160°F (71°C) using a digital food thermometer. The pasta should be tender when pierced with a fork, and the entire structure should feel firm yet yielding.

  • Ground meat: 160°F (71°C) in the thickest part
