Tips for success

For a more intense garlic flavor, lightly crush the garlic cloves with the side of a knife rather than mincing them finely. This allows the garlic to infuse the butter without the risk of small bits burning too quickly in the high heat of the pan. The large pieces can be easily removed or served alongside the steak for a milder, roasted garlic experience.

If the pan seems too dry during the basting phase, you can add a small splash of neutral oil before adding the butter. This helps the butter stay stable and prevents it from browning too rapidly.

Always keep the heat adjusted to medium during this phase to ensure that the garlic and herbs infuse the butter gently without becoming acrid or burnt, which would ruin the sauce.

Variations

  • Peppercorn Butter Steak: Add one tablespoon of crushed black peppercorns to the butter mixture for a spicy, pungent kick that pairs perfectly with the savory beef crust.
  • Lemon Zest Finish: Stir a teaspoon of fresh lemon zest into the herb butter at the very end to provide a bright, acidic lift that cuts through the richness of the meat.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the steak is completely cooled before refrigerating.
Freezer
Freeze the cooked steak in a freezer-safe bag for up to 2 months. Thaw in the refrigerator overnight.
Reheat
Reheat gently in a skillet over low heat with a little extra butter until just warmed through to avoid overcooking.

Store any leftover steak in an airtight container in the refrigerator for up to three days. It is best to slice the steak only when ready to serve to maintain its moisture. Keep the leftover herb butter in a small container to brush over the meat when reheating, which helps restore the flavor and prevents the beef from drying out during the process.

You can prepare the garlic herb butter ahead of time by mixing the softened butter with the minced garlic and chopped rosemary. Roll the mixture into a log using parchment paper and refrigerate or freeze it.

This way, you can simply slice off a medallion of flavored butter to add to the pan during the final stages of cooking, streamlining the entire preparation process.

Serving ideas

Serve the steak immediately while it is still warm, ideally on a pre-warmed plate to maintain the temperature of the meat and the herb butter.

A simple side of roasted asparagus or a fresh green salad provides a bright, crisp contrast to the richness of the beef and butter. The goal is to keep the focus on the quality of the steak, so avoid overly complex side dishes.

Arrange the steak on the board or plate and ensure any remaining butter from the pan is poured over the top. The visual appeal of the glistening, herb-flecked butter is a significant part of the dining experience.

If preferred, slice the steak against the grain before serving to make it even easier to eat, ensuring each piece is coated in the flavorful, aromatic pan drippings.

Frequently asked questions

Can a different type of pan be used for searing?
While cast iron is preferred for its heat retention, a heavy-bottomed stainless steel pan works well. Avoid non-stick pans as they cannot handle the high heat required for a proper sear.
How can the garlic from burning during the basting process be prevented?
Keep the heat at medium during the basting phase. Adding the garlic only after the steak has been seared and the butter has melted helps manage the temperature effectively.
Why is it important to rest the steak?
Resting allows the muscle fibers to relax and the internal juices to redistribute throughout the meat. This ensures that every slice remains moist, tender, and flavorful upon serving.

Ingredients

  • 2 pieces steak, ribeye or strip
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary

Instructions

  1. Heat a heavy cast iron skillet over high heat until smoking. Carefully place the steaks into the hot skillet and sear undisturbed to develop a deep brown, crispy crust. Flip the steaks once to ensure even browning on both sides.
  2. Reduce the heat to medium. Add the unsalted butter, minced garlic, and fresh rosemary sprigs to the skillet. As the butter melts and foams, use a large spoon to continuously baste the steaks with the aromatic garlic butter. Continue basting until the internal temperature reaches 145°F (63°C), then remove from the pan and let the meat rest for at least 3 minutes.
  3. Transfer the rested steaks to a wooden cutting board. Pour the remaining garlic herb butter from the pan over the top of the steaks before serving.
