Before you start
Before you begin, make sure the coconut cream is well chilled. If using a can, refrigerate it overnight. Prepare the mango by peeling and dicing it, and rinse the raspberries.
Grate the white chocolate and set aside. Have all your ingredients measured and ready. You’ll also want to chill your serving glasses in the freezer for a few minutes to keep the smoothie cold longer.
Ingredients at a glance (8)
- 2 cups diced ripe mango (from about 2 large mangoes)
- 1/2 cup passion fruit pulp (fresh or frozen)
- 1 cup full-fat coconut milk

Instructions
Prep the Fruit and Chocolate
- Prep the Fruit and ChocolateSlice the mango cheeks away from the pit, then dice the flesh into 1/2-inch cubes. Rinse the raspberries and pat them dry. Grate the mango white chocolate on the large holes of a box grater to create a pile of golden curls. Set aside.Look for The mango cubes are uniform and the chocolate curls are light and fluffy.Tip Chill the coconut cream in the refrigerator overnight before whipping for best results.
- Whip the Coconut CreamScoop the solid coconut cream from the can into a chilled bowl. Whip with a hand mixer or whisk until soft peaks form. Keep refrigerated until ready to use.Look for The coconut cream is thick and holds soft peaks.Tip If the cream is too thin, add a teaspoon of cornstarch while whipping.
You should have neatly diced mango cubes, clean and dry raspberries, and a pile of golden chocolate curls. The coconut cream should be whipped and ready. Everything is set for blending.
Blend and Layer
- Blend the Mango BaseIn a blender, combine the diced mango, passion fruit pulp, coconut milk, and crushed ice. Secure the lid and blend on high until completely smooth and thick, about 45 seconds. The mixture should be a vibrant golden color and have a vortex while blending.Look for The smoothie is thick, creamy, and golden with no visible chunks.Tip If the smoothie is too thick, add a splash of coconut milk, but keep it thick for layering.
- Layer the SmoothiePour a layer of the mango smoothie into each tall glass, filling about one-third. Add a layer of fresh raspberries on top, then gently pour more mango smoothie over the raspberries to create a second layer. Repeat if desired, ending with a smoothie layer.Look for The layers are distinct with raspberries nestled between the golden smoothie.Tip Pour the smoothie slowly over the back of a spoon to keep layers clean.
The mango smoothie is thick, golden, and velvety. When poured into glasses, it holds distinct layers with raspberries nestled between. The mixture should be cold and fragrant with mango and passion fruit.
Garnish and Serve

Serve immediately with a straw or spoon.Look for The glass is beautifully layered with cream, fruit, and chocolate curls.Tip For an extra sunrise effect, drizzle a little passion fruit pulp over the cream.
The glasses are topped with whipped coconut cream, raspberries, passion fruit seeds, and chocolate curls. The layers are visible and the presentation is vibrant and appetizing.
Serve immediately. Take a moment to check the color, texture and aroma before you move on to the next step.
Common mistakes
One common mistake is over-blending the smoothie, which can make it too thin and difficult to layer. Blend just until smooth and thick. Another issue is using unripe mango, which will be tart and fibrous. Always taste a piece before using.
When layering, pouring too quickly can cause the layers to mix. Take your time and pour gently. Finally, if the coconut cream doesn’t whip, it may be too warm or have too much liquid; make sure to chill it thoroughly and only use the solid part.
How to tell it’s done
The smoothie is done when it is thick and creamy, with no visible chunks of mango or ice. It should have a vibrant golden color and a smooth, velvety texture. When you pull the blender jar away, the smoothie should leave a thick coating on the sides.
The layers in the glass should be distinct, with the raspberries visible between the golden smoothie. The whipped coconut cream should hold soft peaks and be spoonable.
