Before you start

Before starting, take the butter out of the refrigerator for the streusel so it is cold but workable. Measure all ingredients accurately. Line a 12-cup muffin tin with paper liners. Heat the oven to 375°F (190°C) so it is ready when the batter is.

Prepare the dry ingredients in a separate bowl. If using fresh raspberries, pick them over and gently rinse, then pat dry completely. Toss them with a tablespoon of flour just before folding into the batter.

Ingredients at a glance (15)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 2 tbsp thick Turkish yogurt
  • 2 1/8 cups all-purpose flour
  • 1 packet baking powder (10g)
  • 1 packet vanilla sugar (5g)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup fresh raspberries, floured
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp cold unsalted butter, cut into small pieces
  • 1 tbsp granulated sugar
  • 1/2 cup all-purpose flour

Instructions

Make the Batter

  1. Prepare the Wet Mixture
Heat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners. In a large mixing bowl, whisk the melted butter with the sugar and eggs until pale and ribbony, about 1 to 2 minutes.
Look for The mixture should look smooth, glossy, and slightly thickened.
Tip Whisk vigorously to incorporate air; this helps create a tender crumb.
  2. Add Milk and Yogurt
Stir in the whole milk and thick Turkish yogurt until fully combined. The batter will be thin at this point.
Look for The liquid should be uniform with no streaks of yogurt.
Tip Use room-temperature milk and yogurt for a smoother mix.
  3. Mix Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, vanilla sugar, salt, and baking soda. Add the dry mixture to the wet mixture and fold gently with a rubber spatula until just combined. Do not overmix.
Look for A few streaks of flour are okay; the batter should be thick and slightly lumpy.
Tip Overmixing develops gluten and makes muffins tough.

The wet mixture should be pale, glossy, and slightly thickened after whisking. After folding in the dry ingredients, the batter should be thick and lumpy but cohesive, with no dry streaks. The raspberries and chocolate chips should be evenly distributed, and the berries should remain whole. The batter will be thick enough to scoop.

Assemble and Top

  1. Fold in Berries and Chocolate
Toss the fresh raspberries with a little extra flour (about 1 tablespoon) to coat. Gently fold the floured raspberries and semi-sweet chocolate chips into the muffin batter with a spatula, taking care not to crush the berries.
Look for Berries and chips should be evenly distributed without being smashed.
Tip Coating berries in flour helps prevent them from sinking to the bottom.
  2. Fill the Muffin Tin
Scoop the batter evenly into the prepared muffin cups, filling each about three-quarters full. The batter will be thick.
Look for The cups should be evenly filled; a cookie scoop works well.
Tip For taller domes, fill the cups to the top edge.
  3. Make the Streusel
In a small bowl, rub the cold butter, sugar, and flour together with your fingertips until coarse crumbs form. Scatter the streusel generously over each muffin top, and add a few extra chocolate chips if desired.
Look for The streusel should be crumbly, not a paste.
Tip Work quickly so the butter stays cold; this gives a crisper topping.

The filled muffin cups should be about three-quarters full. The streusel should look like coarse crumbs, with some pea-sized pieces. When scattered over the batter, it should cover the tops generously.

Extra chocolate chips can be pressed lightly into the streusel. The unbaked muffins should look inviting, with the crumble promising a crunchy finish.

Bake and Cool

  1. Bake the Muffins
Bake the muffins in the preheated oven for 20 to 25 minutes, until the tops are golden brown and a toothpick inserted into the center of a muffin comes out with only a few moist crumbs. The internal temperature of the muffins should reach 200°F (93°C) for fully set eggs.
Look for The tops spring back when lightly pressed and the kitchen smells buttery.
Safe temperature 200°F (93°C) internal temperature (egg dishes)
Tip Rotate the pan halfway through baking for even browning.
  2. Cool and Serve
Transfer the muffin tin to a wire rack and let the muffins cool in the pan for 5 minutes. Then remove the muffins from the tin and let them cool completely on the rack. Serve warm for the best melted chocolate experience.
Look for The muffins should release easily from the liners and feel firm.
Tip Warm muffins have gooey chocolate; if storing, reheat briefly before serving.

The muffins should be puffed and golden, with the streusel crisp and lightly browned. A toothpick inserted in the center should come out with just a few moist crumbs. The internal temperature should be at least 200°F (93°C). After cooling for 5 minutes, the muffins should release easily from the pan and feel firm to the touch.

Common mistakes

Overmixing the batter is the most common mistake; it makes the muffins dense and tunnels. Mix until the flour is just incorporated, leaving a few streaks. Another pitfall is underbaking, which leaves the centers gummy.

Always test with a toothpick. Adding frozen raspberries without flour can cause them to sink and bleed color. Finally, opening the oven door too early can cause the muffins to collapse; wait until at least 15 minutes of baking have passed.

How to tell it’s done

The muffins are done when the tops are golden brown and a toothpick inserted into the center comes out with only a few moist crumbs attached, no wet batter. The internal temperature of a muffin should be around 200°F (93°C), which ensures the eggs are fully set and the crumb is cooked through.

The tops should spring back when lightly pressed with a finger. If the streusel is browning too quickly, tent the muffins loosely with aluminum foil for the last few minutes.
