Tips for success
For the most flavorful sauce, use a good-quality Parmesan and grate it yourself. Pre-grated cheese often contains cellulose, which prevents smooth melting.
Also, add the cheese gradually while whisking to ensure it incorporates without clumping. If you prefer a thicker sauce, let it simmer a bit longer before adding the pasta.
To make the dish extra lemony, add a teaspoon of lemon zest at the end as a garnish. The oils in the zest release a burst of fragrance.
For a hint of heat, a pinch of red pepper flakes in the sauce works beautifully. And always taste before serving—adjust salt and pepper as needed, since Parmesan adds saltiness.
Variations
- Shrimp Alfredo: Replace the chicken with 1 pound of peeled shrimp. Sear the shrimp for 2–3 minutes per side until pink and cooked through. The lemon and garlic complement shrimp beautifully.
- Vegetable Alfredo: Add sautéed mushrooms, spinach, or roasted cherry tomatoes to the sauce. Skip the chicken for a vegetarian version. The vegetables add color and texture.
- Spicy Alfredo: Add 1/2 teaspoon of red pepper flakes to the sauce along with the garlic. The heat cuts through the creaminess and adds a pleasant kick.
- Herb Alfredo: Stir in 1 tablespoon of fresh basil or thyme with the parsley. Fresh herbs brighten the dish and add an aromatic layer.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Reheat with a splash of milk or broth to restore the sauce's creamy texture.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of milk or pasta water. Stir often to prevent the sauce from breaking.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; when reheating, add a splash of milk or chicken broth to loosen it.
Reheat gently on the stovetop or in the microwave, stirring occasionally to prevent the sauce from separating.
The chicken can be seared and sliced up to a day ahead, then refrigerated. The sauce can also be made ahead and stored separately. When ready to serve, reheat the sauce, cook fresh pasta, and toss everything together. This makes weeknight dinner even quicker.
Serving ideas
Serve this Alfredo immediately after tossing, while the sauce is still glossy and warm. Garnish with extra Parmesan, a few cracks of black pepper, and a sprinkle of fresh parsley.
A side of garlic bread or a simple green salad with a vinaigrette balances the richness.
For a complete meal, pair with roasted asparagus or sautéed spinach. The bright lemon flavor also pairs well with a crisp white wine like Pinot Grigio or Sauvignon Blanc. This dish is satisfying on its own, but the sides make it a feast.

Quick Lemon Garlic Chicken Alfredo with Fettuccine

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 12 oz fettuccine pasta
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
Instructions
- Pat the chicken breasts dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over the chicken breasts. Heat the olive oil and butter in a large skillet over medium-high heat. When the butter is foaming, add the chicken breasts. Cook for 4 minutes per side, until golden brown and caramelized. The chicken is done when it reaches 165°F (74°C) in the thickest part.
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Drain the pasta in a colander and set aside.
- In the same skillet, reduce the heat to medium. Add the minced garlic and cook for 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the lemon zest and lemon juice. Cook for 2–3 minutes, stirring occasionally, until the sauce slightly thickens. Reduce the heat to low and whisk in the grated Parmesan until melted and smooth.
- Add the drained fettuccine to the skillet with the sauce. Use tongs to toss the pasta, coating every strand with the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water until it reaches the desired consistency.
- Slice the rested chicken breasts into strips. Place the dressed pasta on a serving platter or divide among plates. Top with the sliced chicken and sprinkle with fresh parsley and cracked black pepper. Finish with a little extra lemon zest if desired.
