Tips for success
For the best cheese pulls, use low-moisture mozzarella, which melts smoothly and stretches well. If using fresh mozzarella, pat it dry to remove excess moisture, which can make the bread soggy.
To ensure even stuffing, use your fingers to gently open each cross-hatch cut before inserting the filling. This helps the cheese and pepperoni reach deep into the bread.
If you prefer a spicier kick, increase the red pepper flakes to 1 teaspoon or add a dash of crushed chili oil to the butter. For a crispier top, brush the bread with a little extra melted butter before baking.
Let the loaf rest for a few minutes after baking—this allows the cheese to set slightly, making it easier to pull apart without everything sliding off.
Variations
- Vegetarian: Omit the pepperoni and add sautéed mushrooms, bell peppers, or olives. Use the same amount of mozzarella and marinara. The bread will be just as flavorful and satisfying.
- Spicy Sausage: Cook 8 oz of Italian sausage, crumble it, and mix it with the marinara before stuffing. Replace the pepperoni with the sausage mixture. Adjust the red pepper flakes to taste.
- Extra Cheesy: Add 4 oz of shredded provolone or cheddar along with the mozzarella. Mix the cheeses together and stuff as directed. The combination adds a sharper flavor and even more gooeyness.
- Herb Butter: Add 1 tbsp of fresh chopped parsley or basil to the garlic butter. This adds a fresh, bright note that complements the rich cheese and pepperoni. Sprinkle extra herbs on top before baking.

Store any leftover pull-apart bread in an airtight container in the refrigerator for up to 3 days. To reheat, place the bread on a baking sheet and warm in a 350°F (175°C) oven for 5–7 minutes, or until the cheese is melted and the bread is crispy again. Avoid microwaving, as it will make the bread soggy.
The garlic butter can be prepared up to 2 days ahead and stored in the refrigerator. The bread can be cross-hatched and stuffed with the cheese, marinara, and pepperoni up to 4 hours in advance, then covered and refrigerated.
When ready to bake, pour the garlic butter over the top and bake as directed, adding a few extra minutes if the bread is cold.
Serving ideas
Serve this pull-apart bread as a centerpiece appetizer at parties, game days, or family gatherings. Place the loaf on a large platter and let everyone pull their own piece.
It pairs beautifully with extra marinara sauce for dipping, but the bread is already saucy and flavorful. The contrast of crispy bread, gooey cheese, and spicy pepperoni is irresistible.
For a complete meal, serve alongside a fresh green salad or a bowl of soup. This bread also makes a fun side dish for pasta nights. Since it is best enjoyed warm, serve it straight from the oven. The visual appeal of the cheese pulls makes it a crowd-pleaser that disappears quickly.

Pull-Apart Pepperoni Pizza Garlic Bread

Ingredients
- 1 loaf round sourdough boule (about 1 lb)
- 6 tbsp unsalted butter, melted
- 5 cloves garlic, grated
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 8 oz sliced mozzarella
- 1/2 cup marinara sauce
- 40 mini pepperoni cups
Instructions
- Place the sourdough boule on a cutting board. Using a bread knife, cut a cross-hatch pattern into the top, making cuts about 1 inch apart. Cut down to about 1 inch from the bottom, but do not cut all the way through. The loaf should remain intact.
- In a small bowl, combine the melted butter, grated garlic, oregano, and red pepper flakes. Stir well to blend.
- Gently pull apart the cuts in the bread to open the crevices. Tuck slices of mozzarella into each opening, along with small spoonfuls of marinara. Press mini pepperoni cups into the cheese and sauce, distributing them evenly throughout the loaf.
- Pour the garlic butter evenly over the top of the stuffed loaf, making sure it seeps into the crevices. Use a pastry brush to coat the surface of the bread.
- Place the loaf on a baking sheet. Bake at 375°F (190°C) for 18 minutes, until the cheese is melted and bubbly and the bread is golden and crispy on top.
- Remove the loaf from the oven and let it cool for 2–3 minutes. Then pull apart the bread cubes with your hands or tongs, revealing the long cheese pulls. Serve warm.
