Tips for success
For the best flavor, use a good-quality smoked kielbasa—it should have a deep, smoky taste that infuses the sauce. If you prefer a spicier kick, use andouille sausage or add a pinch of red pepper flakes.
The red pepper sauce can be homemade or store-bought; just make sure it's creamy and has a roasted flavor. If you want extra richness, stir in a splash of heavy cream before serving.
To ensure even cooking, spread the kielbasa in a single layer at the bottom of the slow cooker. The pasta shells should be mostly submerged in the sauce, so press them down gently.
If the sauce doesn't cover the pasta completely, add a little water or broth—but only if needed. Avoid overfilling the slow cooker; leave some space at the top to prevent overflow.
Variations
- Spicy Andouille: Swap the smoked kielbasa for andouille sausage to add a spicy Cajun kick. You can also add a pinch of cayenne or red pepper flakes to the sauce for extra heat.
- Vegetarian Version: Omit the kielbasa and add a can of drained chickpeas or white beans for protein. Use a vegetarian red pepper sauce and increase the amount of cheese for extra richness.
- Cheesy Mushroom: Add 8 oz of sliced mushrooms along with the kielbasa for an earthy flavor. Sauté the mushrooms first if you prefer a firmer texture, or just add them raw to the slow cooker.
- Creamy Spinach: Stir in 2 cups of fresh spinach during the last 30 minutes of cooking. The spinach will wilt into the sauce, adding color and nutrients without overpowering the dish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or milk to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop over medium heat, stirring occasionally, until hot and bubbling.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce as it sits, so you may want to add a splash of water or milk when reheating to loosen it up. Reheat gently in the microwave or on the stovetop until hot.
This dish can be assembled in the slow cooker insert the night before and refrigerated. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 30 minutes to the cooking time since the ingredients will be cold. Alternatively, cook the entire dish, then cool and refrigerate for up to 2 days before reheating.
Serving ideas
Serve this casserole straight from the slow cooker for a casual family dinner, or plate it on a white dish to show off the creamy red sauce and melted cheese.
It pairs well with a simple green salad or crusty bread to soak up the extra sauce. For a complete meal, add a side of roasted vegetables or a steamed green vegetable like broccoli or green beans.
This dish is hearty enough to be a standalone main course. Each serving is generous, and the flavors are rich and satisfying. You can garnish with fresh parsley or basil if you like, though the video doesn't show that. The cheese pulls beautifully, so serve it warm and enjoy the stretch.

Provolone Kielbasa Red Pepper Shells: Easy Crockpot Dinner

Ingredients
- 2 lb smoked kielbasa, sliced into medallions
- 12 oz medium conchiglie pasta shells
- 2 cups smoky roasted red pepper cream sauce
- 1 cup whole-milk ricotta
- 2 cups shredded provolone cheese
Instructions
- Place the sliced kielbasa medallions in the bottom of a 6-quart slow cooker. Spread them into an even layer. Add the uncooked pasta shells over the kielbasa. Pour the smoky roasted red pepper cream sauce over the pasta, making sure the sauce covers the shells as much as possible. Use a spoon to gently press the shells into the sauce so they are mostly submerged.
- Spoon dollops of whole-milk ricotta over the top of the sauce. Spread the ricotta gently with the back of a spoon, leaving some areas bare. Sprinkle the shredded provolone evenly over the entire surface, covering the ricotta and the pasta. Do not stir the mixture—leave the layers as they are.
- Cover the slow cooker with its lid. Cook on LOW for 4 hours, or on HIGH for 2 hours, until the pasta is tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours of cooking, as this releases heat and slows the cooking process.
- After the cooking time is up, uncover the slow cooker. Check that the pasta shells are tender by tasting one. The sauce should be creamy and slightly thickened, and the cheese should be melted and lightly browned in spots. If the pasta is still firm, cover and cook for another 15 to 30 minutes.
- Using a large spoon, gently stir the casserole to combine the layers. Spoon the hot pasta and kielbasa onto a serving plate or into bowls. Serve immediately, making sure each portion gets some of the melted cheese and sauce.
