Tips for success
For the most flavorful gravy, use a good-quality beef stock or bone broth as the base. If the gravy tastes flat after cooking, stir in a splash of Worcestershire sauce or a teaspoon of balsamic vinegar to brighten it.
The mushrooms can be swapped for cremini or a mix of wild mushrooms; just keep them thickly sliced so they hold up.
To make the brioche buns extra special, toast them in a skillet with a little butter until golden and crisp. This adds a buttery crunch that contrasts with the tender beef.
If you have leftover gravy, it's fantastic over mashed potatoes or roasted vegetables the next day. The recipe is forgiving—feel free to add a bay leaf or thyme sprigs to the pot for extra herbiness.
Variations
- Herb-Infused Gravy: Add 2 sprigs of fresh thyme and 1 bay leaf to the slow cooker before cooking. Remove them before shredding. The herbs lend a subtle earthiness that complements the mushrooms. For a brighter note, stir in a teaspoon of chopped rosemary at the end.
- Spicy Kick: Add 1 diced jalapeño or a teaspoon of red pepper flakes along with the garlic. The heat builds slowly during cooking, adding a warm undercurrent without overwhelming the dish. Serve with pickled jalapeños on the side for extra fire.
- Mushroom Medley: Replace half the portobellos with cremini or shiitake mushrooms. The mix adds complexity and a range of textures. Thickly slice all mushrooms so they cook evenly. If using dried shiitakes, soak them first and reserve the soaking liquid to add to the gravy.
- Onion and Worcestershire: Add a large sliced onion and 2 tablespoons Worcestershire sauce to the pot before cooking. The onion melts into the gravy, adding sweetness and depth. The Worcestershire boosts the savory umami. This version is especially good over mashed potatoes.

Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
This recipe is perfect for meal prep. Assemble the slow cooker the night before, cover, and refrigerate the insert. In the morning, place the insert in the base and cook as directed.
The beef can also be fully cooked, shredded, and refrigerated for up to 3 days before serving. Reheat with a little extra gravy.
Serving ideas
Serve the shredded beef on toasted brioche slider buns for a hearty, handheld dinner. Add a spoonful of the gravy-soaked mushrooms to each bun, and offer extra gravy on the side for dipping.
A crisp green salad or a bowl of pickles balances the richness. These sliders are also great for game day or a casual get-together.
For a plate dinner, pile the beef over creamy mashed potatoes, egg noodles, or polenta. Spoon the brown gravy and mushrooms generously over the top. The dish pairs well with roasted carrots or green beans. Leftovers are just as good the next day—try them on a baked potato or in a warm tortilla.

Portobello Brown Gravy Chuck Roast: Easy Crockpot Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 8 oz portobello mushroom caps, thickly sliced
- 2 tbsp minced garlic
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
- 6 toasted brioche slider buns
Instructions
- Place the beef chuck roast in the center of the slow cooker. Scatter the sliced portobello mushrooms over the top, then sprinkle with the minced garlic. Pour the rich brown gravy over the roast and mushrooms. Dot the surface with the butter pats.
- Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 5-6 hours, until the beef is fork-tender and shreds easily. The gravy will deepen in color and the mushrooms will soften into the sauce. Let it rest for 3 minutes before slicing.
- When the roast is fork-tender, transfer it to a cutting board. Use two forks to shred the beef into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the gravy.
- Let the shredded beef rest in the warm gravy for at least 3 minutes before serving. This allows the meat to reabsorb some of the sauce and stay juicy.
- While the beef rests, toast the brioche slider buns in a toaster or under the broiler until golden and warm.
- Spoon a generous mound of the shredded beef and mushrooms onto the bottom half of each toasted bun. Top with the other half and serve immediately, with extra gravy on the side if desired.
