Before you start

Before starting, make sure the cream cheese is softened to room temperature and the phyllo dough is thawed. Preheat the oven to 350°F (175°C). Have a 9-inch springform pan ready, along with a pastry brush, a box grater, and a large mixing bowl.

Measure all ingredients and chop the nuts in advance. Grate the chocolate and set it aside. Line a baking sheet with parchment to place under the springform pan during baking to catch any drips.

Ingredients at a glance (11)
  • 12 sheets phyllo dough, thawed
  • 1/2 cup unsalted butter, melted
  • 32 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups roasted green pistachios, shelled
  • 1 cup walnuts, chopped
  • 6 oz caramelized golden blonde chocolate
  • 1/2 cup warm honey, for drizzling

Instructions

Building the Crust and Batter

  1. Prepare the Phyllo and Chocolate
Preheat the oven to 350°F (175°C). Brush a 9-inch springform pan with melted butter. Lay one sheet of phyllo in the pan, pressing it into the bottom and up the sides. Brush the phyllo with butter. Repeat with 6 sheets, brushing each layer. Grate the caramelized golden blonde chocolate on the large holes of a box grater into a pile of curls. Set aside.
Look for Phyllo is evenly buttered and covers the pan completely, with no dry spots.
Tip Keep the remaining phyllo covered with a damp towel while working to prevent cracking.
  2. Chop the Nuts
Coarsely chop the roasted green pistachios. You should have about 1 1/2 cups. Set aside 1/4 cup for the topping. Chop the walnuts into small pieces.
Look for Pistachios are in coarse, uneven pieces; walnuts are finely chopped.
Tip Toasting the nuts lightly in a dry skillet enhances their flavor, but it's optional.
  3. Make the Cheesecake Batter
In a large bowl, beat the cream cheese and sugar until smooth. Add the honey and vanilla, beating until incorporated. Add the eggs one at a time, beating on low speed just until combined. Scrape the bowl as needed.
Look for Batter is smooth and creamy with no lumps.
Tip Use room-temperature ingredients for a silky texture.

After the first phase, you have a buttered phyllo-lined pan, a bowl of grated chocolate, and a smooth, creamy cheesecake batter. The phyllo should be evenly coated and the batter free of lumps. The nuts are chopped and ready. The kitchen smells of butter and vanilla, and the stage is set for assembly.

Assembling and Baking

  1. Assemble the Layers
Pour the cheesecake batter over the phyllo crust. Sprinkle the chopped pistachios and walnuts evenly over the batter. Drizzle with warm honey, letting it sink into the batter.
Look for Nuts are scattered evenly; honey forms golden ribbons on top.
Tip Warm the honey slightly to make it easier to drizzle.
  2. Add Top Phyllo Layers
Layer the remaining 6 phyllo sheets on top of the filling, brushing each with melted butter. Tuck the edges down around the filling. Place the pan on a baking sheet.
Look for Top phyllo is golden and crisp, with edges tucked neatly.
Tip Don't worry about perfection; the rustic look is part of the charm.
  3. Bake the Cheesecake
Bake for 50 to 60 minutes, until the phyllo is deep golden brown and the center is almost set but still slightly moist. The internal temperature should reach 160°F (71°C) in the center. Let cool completely on a wire rack, then refrigerate for at least 4 hours.
Look for Phyllo is crisp and golden; center is set but still tender.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the top browns too quickly, tent loosely with foil.

The cheesecake is assembled with nuts and honey swirled into the batter, topped with more phyllo, and baked until golden.

The top should be deeply browned and crisp, and the center should feel set but slightly soft. A gentle jiggle should be minimal. The aroma of honey and toasted nuts fills the kitchen.

Finishing and Serving

  1. Finish with Honey and Pistachios
Once chilled, remove the springform ring. Warm the remaining honey until thin. Brush the top of the cheesecake with warm honey and sprinkle with the reserved chopped pistachios and the grated chocolate curls.
Look for Top is glossy with honey, studded with pistachios and chocolate curls.
Tip Let the cheesecake sit at room temperature for 15 minutes before slicing for clean cuts.
  2. Slice and Serve
Slice a thick triangular wedge using a sharp knife. Lift each slice with a metal cake server, keeping the phyllo layers intact. Serve chilled or at room temperature.
Look for Tall slice holds its shape, showing distinct layers of phyllo, cheesecake, and nuts.
Tip Use a thin spatula to support the bottom of each slice.

After chilling, the cheesecake is firm and sliceable. The top is brushed with warm honey, sprinkled with pistachios and chocolate curls. When sliced, the layers are distinct and the slice holds its shape. The phyllo is crisp, the filling creamy, and the nuts add crunch. It looks like a work of art.

Common mistakes

One common mistake is overbaking the cheesecake, which can cause it to crack. Bake just until the center is set but still moist. Another is using cold cream cheese, which creates lumps. Always soften it first.

If the phyllo tears, don't worry—just patch it with another piece. Brush each layer well with butter to ensure crispness. Letting the cheesecake cool completely before chilling is essential to prevent a soggy crust.

How to tell it’s done

The cheesecake is done when the phyllo is deep golden brown and the center is almost set but still slightly moist. The internal temperature should reach 160°F (71°C) in the center.

A toothpick inserted near the center should come out with a few moist crumbs, not wet batter. The edges will be fully set and slightly puffed. Let it cool completely, then refrigerate for at least 4 hours before slicing.
