Tips for success

For the most vibrant color, use roasted pistachios that are bright green. If you can only find salted pistachios, rinse them and pat dry before using.

When shaping the log, wet your hands slightly to prevent sticking. The parchment paper is your best tool for rolling a tight, even cylinder.

If the mixture feels too sticky to handle, chill it in the bowl for 10 minutes before shaping. For cleaner slices, use a serrated knife and saw gently.

You can also roll the log in extra coconut after slicing to coat the cut sides if desired. Store any leftovers in an airtight container.

Variations

  • Chocolate Date Log: Add 2 tablespoons unsweetened cocoa powder and 1/4 cup mini chocolate chips to the date mixture before shaping. The chocolate melts slightly, creating a fudgy texture. Omit the coconut coating and roll in crushed chocolate wafers instead.
  • Spiced Date Log: Add 1/2 teaspoon ground cardamom, 1/4 teaspoon ground ginger, and a pinch of ground cloves along with the cinnamon. This gives the log a warm, aromatic flavor reminiscent of chai. Replace the sesame seeds with finely chopped dried apricots for extra chewiness.
  • Citrus Date Log: Add 1 tablespoon orange zest and 1 teaspoon orange blossom water to the date mixture. The bright citrus notes complement the rich dates. Roll the log in a mixture of coconut and finely chopped candied orange peel for a festive touch.
  • Nut-Free Date Log: Replace the walnuts, almonds, and pistachios with an equal amount of toasted sunflower seeds, pumpkin seeds, and chopped dried figs. Use a nut-free butter substitute like coconut oil. This version is safe for those with tree nut allergies.

Storage and make-ahead

Fridge
Refrigerate in an airtight container for up to 2 weeks. Separate layers with parchment to prevent sticking.
Freezer
Freeze the log or slices wrapped in plastic and foil for up to 3 months. Thaw overnight in the refrigerator.
Reheat
No reheating needed. Serve chilled or at room temperature.

Store the date nut log in an airtight container in the refrigerator for up to 2 weeks.

Wrap the log tightly in plastic wrap or parchment before refrigerating to prevent it from absorbing odors. Slices can be kept in a sealed container for up to 5 days.

This recipe is perfect for making ahead. The log can be prepared and chilled up to 3 days in advance. For longer storage, freeze the whole log or slices for up to 3 months. Thaw in the refrigerator overnight before slicing or serving.

Serving ideas

Serve the slices at room temperature for the best texture and flavor. Arrange them on a platter with fresh fruit and a drizzle of honey for a beautiful dessert board. They also pair well with coffee or tea as an afternoon treat.

For a festive presentation, dust the slices with a little powdered sugar or top each with a small dollop of whipped cream.

The mosaic pattern makes them a stunning addition to holiday cookie trays or gift boxes. They are sturdy enough to pack for picnics or lunchboxes.

Frequently asked questions

Can this date log be made without butter?
Yes, use coconut oil or a vegan butter substitute in equal amounts. The dates will still soften and bind the nuts together. Make sure the coconut oil is melted before adding. The flavor will be slightly different but still delicious.
Why is the log crumbly after chilling?
This usually happens if the dates were not cooked long enough to become a paste, or if the mixture wasn’t pressed firmly enough. Re-warm the mixture in a skillet for a minute, then reshape and chill again. Also, ensure the nuts are not too large; chop them finely if needed.
Can the slices be made thinner?
Absolutely. Slice the log as thin as 1/2 inch if desired. Thinner slices are more delicate and may need a very sharp knife. Chilling the log for at least 1 hour makes slicing easier. Keep the slices refrigerated until serving.
How long does the date log keep at room temperature?
It is best to keep it refrigerated because of the butter. At room temperature, it can sit out for up to 2 hours during serving. For longer storage, always refrigerate. The log will soften if left out for too long.
Can this recipe be doubled?
Yes, simply double all ingredients. Use a larger skillet to cook the dates, and shape into two logs rather than one very large one. Chilling time remains the same. This is great for parties or gifting.

Sliced pistachio date mosaic log showing colorful nut cross-sections and coconut coating

Ingredients

  • 500 g pitted Medjool dates
  • 2 tbsp unsalted butter
  • 1/2 cup chopped walnuts
  • 1/2 cup sliced almonds
  • 1/2 cup whole roasted pistachios
  • 1 tsp ground cinnamon
  • 1/4 cup toasted sesame seeds
  • 1/2 cup unsweetened shredded coconut flakes

Instructions

  1. Place the pitted Medjool dates in a wide skillet with the butter over low heat. Cook, pressing with a spatula, until the dates soften and turn into a warm, silky paste. This should take about 5 minutes. Stir frequently to prevent sticking.
  2. Add the chopped walnuts, sliced almonds, whole roasted pistachios, ground cinnamon, and toasted sesame seeds to the date paste. Stir until everything is evenly distributed and the mixture forms a cohesive, chunky dough.
  3. Transfer the date-nut mixture onto a large piece of parchment paper. Using the paper to help, shape and roll the mixture into a tight, uniform log about 2 inches in diameter. Press firmly to compact it.
  4. Spread the unsweetened shredded coconut flakes on a plate. Roll the log in the coconut, pressing gently so the flakes adhere to all sides. Pat any extra coconut onto the ends.
  5. Wrap the coconut-coated log in the parchment paper, twisting the ends to seal. Refrigerate for at least 30 minutes, or until firm enough to slice cleanly.
  6. Unwrap the chilled log and place it on a cutting board. Using a sharp chef's knife, slice into 1-inch thick rounds. Serve immediately or store in the refrigerator.
