Tips for success
For the best caramelization, don’t rush the final step. Letting the sauce bubble uncovered on HIGH for 10–15 minutes concentrates the flavors and gives the dish that sticky, glossy finish.
Stir occasionally to prevent sticking, but don’t overdo it—you want the chicken to stay in large, pull-apart pieces. If you have a broiler-safe slow cooker insert, you can even transfer the sauced chicken to a baking sheet and broil for 2–3 minutes for extra char.
Serve this over creamy mashed potatoes to soak up the sauce, or with crusty bread for dipping. The sauce is also fantastic over rice or egg noodles. For a complete meal, add a simple green salad on the side.
The recipe is forgiving—if you prefer a spicier kick, add a minced jalapeño or a dash of cayenne with the glaze. Leftovers are excellent in tacos or on a sandwich the next day.
Variations
- Spicy Pineapple Bourbon Chicken: Add 1–2 minced jalapeños or a teaspoon of crushed red pepper flakes along with the glaze. The heat balances the sweetness and adds a pleasant kick.
- Garlic and Ginger Version: Stir in 3 minced garlic cloves and 1 tablespoon grated fresh ginger with the glaze. This adds an aromatic depth that complements the bourbon and pineapple.
- Pineapple Bourbon Pork Chops: Swap the chicken thighs for 6 bone-in pork chops (about 1 inch thick). Cook on LOW for 3–4 hours, or until the pork reaches 145°F (63°C), then rest 3 minutes before serving.
- Vegetarian Option: Replace the chicken with 3 cups of extra-firm tofu, pressed and cut into cubes. Cook on LOW for 2–3 hours, then caramelize the sauce as directed. Serve over rice.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when cold; add a splash of water or broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently on the stovetop or microwave.
- Reheat
- Reheat gently on the stovetop over medium-low heat, adding a splash of water or chicken broth to loosen the sauce, or in the microwave in 30-second intervals.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently in the microwave or on the stovetop with a splash of water to loosen it. Let the dish cool for no more than 2 hours before refrigerating to ensure food safety.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed. Add 15–20 minutes to the cooking time if the insert is cold. This makes the recipe even easier for busy weeknights.
Serving ideas
This dish is best served hot, straight from the slow cooker. Pile the shredded chicken and caramelized pineapple onto plates, and spoon extra sauce over the top.
Creamy mashed potatoes are the classic side, but rice, polenta, or crusty bread also work beautifully. The sweetness of the pineapple pairs well with a tangy slaw or a crisp green salad to cut through the richness.
For a fun twist, serve the chicken in warm tortillas with pickled onions and a drizzle of extra sauce—it makes incredible tacos.
The leftovers are just as delicious cold, shredded over a salad or stuffed into a sandwich. Garnish with chopped cilantro or sliced green onions if you like, though the dish is perfectly delicious on its own.

- 6 boneless skinless chicken thighs
- 20 oz pineapple chunks in juice
- 1 cup bourbon molasses BBQ glaze

- Drizzle the bourbon molasses BBQ glaze over the top, then sprinkle with the brown sugar. Do not stir.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C) in the thickest part.
- After the chicken is tender, if the sauce is thin, remove the chicken to a plate and set the slow cooker to HIGH. Let the sauce bubble uncovered for 10–15 minutes, stirring occasionally, until it thickens and turns glossy.
