Before you start

Start by gathering all your ingredients and ensuring the meat is at a cool temperature. Chop the bell peppers into uniform strips so they cook evenly in the skillet.

Have your loaf pan ready, and if you prefer easy cleanup, line it with a piece of parchment paper. Preheat your oven early so it is at the correct temperature the moment you finish assembling the loaf.

Ingredients at a glance (4)
  • 2 lb ground meat
  • 2 bell peppers, sliced
  • 8 oz provolone cheese, sliced
  • 2 tbsp green onions, sliced

Instructions

Sautéing the vegetables

  1. Sauté the filling
Heat a large skillet over medium-high heat. Add the sliced bell peppers and sauté until they are tender and slightly caramelized, about 5 to 7 minutes. Remove from the skillet and set aside to cool slightly.
Look for peppers are soft and slightly browned
Tip Do not overcook the peppers, as they will finish cooking inside the meatloaf.

The peppers should be soft, tender, and lightly browned at the edges. They should no longer be raw or crunchy, as they will only steam slightly once trapped inside the meatloaf. Ensure they are drained well of any excess oil before you begin the assembly process to maintain the integrity of the ground meat mixture.

Assembling the loaf

  1. Assemble the meatloaf
In a large bowl, season the ground meat with salt and pepper to taste. Press half of the meat mixture into the bottom of a loaf pan. Layer the sautéed peppers and the provolone cheese slices over the meat. Top with the remaining ground meat, sealing the edges well to prevent the cheese from leaking out.
Look for meat is firmly packed with no gaps
Tip Use your hands to ensure the edges are sealed tightly.

The loaf should be tightly packed into the pan with no air pockets visible. The cheese and peppers should be completely encased by the meat, forming a neat, uniform shape.

Check that the edges of the meat are pinched together securely so that the filling stays contained during the baking phase, ensuring a clean slice later.

Baking to perfection

  1. Bake and serve
Preheat your oven to 375°F (190°C). Bake the meatloaf for 50 to 60 minutes. Use a meat thermometer to ensure the center reaches 160°F (71°C). Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh green onions before serving.
Look for internal temperature reaches 160°F
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Letting it rest is crucial for keeping the juices inside.

The meatloaf should develop a beautiful, golden-brown crust on top while the interior remains juicy. When tested, the internal temperature must be at least 160°F (71°C). Once removed from the oven, it should hold its shape, and the cheese should be visibly melted and gooey when you finally slice into the center of the loaf.

Common mistakes

A common mistake is failing to seal the edges of the meatloaf, which allows the provolone to melt out into the pan. Take extra care to press the top and bottom layers of meat together firmly.

Another error is skipping the resting time; slicing into a hot meatloaf immediately causes all the flavorful juices and molten cheese to run out, leaving the final dish dry and less impressive.

How to tell it’s done

The meatloaf is finished when the internal temperature, measured with a reliable meat thermometer inserted into the center, reaches 160°F (71°C). At this point, the exterior should be firm, and the juices should run clear.

Always allow the meatloaf to rest for at least 10 minutes before cutting into it. This resting period allows the juices to redistribute, ensuring that each slice stays moist and holds its structure perfectly.

  • Ground meat: 160°F (71°C) in the thickest part
