Before you start

Before you begin, ensure your ingredients are prepared to streamline the cooking process. Dice the green bell peppers and sweet onions into small, uniform pieces to ensure they cook at the same rate as the shaved ribeye. Have your cheese slices ready and laid out, and melt the herb butter so it is prepared for brushing the tops of the rolls.

Preheat your oven to 375°F (190°C) early so it is at the correct temperature when you are ready to assemble the sandwiches. Clear enough counter space to accommodate the large baking sheet and keep all your tools within easy reach.

Ingredients at a glance (8)
  • 1 lb shaved ribeye
  • 1 green bell pepper, diced
  • 1 sweet onion, diced
  • 1 tsp garlic salt and black pepper
  • 12 slider rolls
  • 6 slices white American cheese
  • 6 slices provolone cheese
  • 3 tbsp herb butter, melted

Instructions

Searing Phase

  1. Searing the Steak and Vegetables
Heat a large skillet over medium-high heat. Add the shaved ribeye, diced green bell pepper, and diced sweet onion to the pan. Season generously with garlic salt and black pepper. Sauté the mixture until the steak is fully browned and the vegetables are tender, ensuring the steak reaches an internal temperature of at least 145°F (63°C). Let the meat rest for at least 3 minutes before proceeding.
Look for The steak should be browned and the peppers should be soft with a slight char.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not crowd the pan; cook in batches if necessary to ensure a proper sear.

The steak and vegetable mixture should smell fragrant and savory. The ribeye must be fully browned throughout, and the onions and peppers should be softened with slight charring. Check that no pink remains in the meat before moving to the assembly stage. The liquid in the pan should have mostly evaporated to ensure the sliders do not become soggy during the baking process.

Assembly Phase

  1. Assembling the Sliders
Preheat your oven to 375°F (190°C). Slice the 12-pack of rolls in half horizontally. Place the bottom halves on a baking sheet. Layer the white American cheese over the rolls, then top evenly with the cooked steak and vegetable mixture. Place the provolone cheese slices over the steak mixture, then cover with the top half of the rolls.
Look for Ensure the cheese covers the meat mixture evenly for the best melt.
Tip Use a serrated bread knife to slice the entire slab of rolls at once for clean edges.

The assembly is complete when the bottom rolls are covered with a layer of American cheese, topped with the steak mixture, and finished with a layer of provolone.

The top rolls should be placed securely on the cheese to create a tight sandwich structure. Ensure the cheese is distributed evenly across all twelve sliders so that every portion receives an equal amount of the melted goodness.

Baking Phase

  1. Baking and Serving
Brush the tops of the rolls generously with the melted herb butter. Bake in the preheated oven for 14 minutes until the cheese is bubbling and the rolls are golden brown. Remove from the oven, let the sliders rest for 5 minutes, then slice into individual units and serve immediately while hot.
Look for The tops should be golden brown and the cheese should be fully melted.
Tip Letting the sliders rest allows the cheese to set slightly, preventing the filling from sliding out.

The sliders are ready when the tops are a rich golden brown and the butter has soaked into the rolls. The cheese should be visibly bubbling around the edges of the rolls, indicating it has reached the ideal melting point. Allow the tray to sit for 5 minutes after removing it from the oven to let the cheese stabilize before you attempt to slice and serve.

Common mistakes

A common mistake is overcrowding the skillet when searing the steak, which causes the meat to steam rather than brown. Work in batches if your pan is not large enough to hold all the ingredients comfortably.

Another error is failing to brush the rolls evenly with the herb butter, which can lead to dry or unevenly browned tops. Be sure to cover the entire surface of the rolls thoroughly to achieve that signature golden, buttery finish that elevates the final dish.

How to tell it’s done

The sliders are done when the tops of the rolls are golden brown and the cheese is completely melted and bubbling. The internal temperature of the steak mixture should have reached at least 145°F (63°C) during the initial searing phase.

Since the sliders are baked for 14 minutes, the internal temperature will remain safe and the cheese will be perfectly molten. Use a spatula to check that the bottom of the rolls are toasted and the cheese has fused the layers together.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
