Tips for success
For extra flavor, add a pinch of saffron soaked in warm water to the kebab mixture. You can also brush the kebabs with melted butter or oil while grilling to keep them moist.
If you prefer a spicier kebab, increase the chili flakes or add a finely chopped serrano pepper.
The salad can be customized with red onion, feta cheese, or a sprinkle of sumac.
For a more substantial meal, serve the kebabs with warm flatbread and grilled tomatoes. Leftover kebabs can be sliced and used in sandwiches or wraps the next day.
Variations
- Spicy Harissa Kebabs: Add 2 tablespoons of harissa paste to the kebab mixture along with the spices. This adds a smoky, spicy depth. Serve with a cooling yogurt sauce.
- Lemon-Herb Kebabs: Add the zest of one lemon and 2 tablespoons of fresh dill to the mixture. Replace the green chilies with a pinch of cayenne for a milder heat.
- Cheese-Stuffed Kebabs: Form the kebabs around a cube of feta or halloumi cheese. The cheese melts inside the kebab, creating a gooey center. Use a mild paprika to complement the cheese.
- Turmeric Saffron Rice: For a more vibrant rice, add 1/2 teaspoon of ground turmeric to the rice while cooking, along with the saffron. This gives a deeper golden color and an earthy flavor.

Serve the kebabs hot off the grill, arranged over a bed of saffron rice. The cucumber-tomato salad adds a refreshing crunch and acidity that balances the rich, spiced meat.
A wedge of lemon on the side lets everyone brighten their plate to taste.
For a traditional Persian spread, add grilled tomatoes, sumac onions, and warm lavash bread.
The kebabs are also delicious wrapped in flatbread with fresh herbs and a dollop of yogurt. This dish is perfect for a family dinner or a casual gathering.

Persian-Style Minced Chicken Kebabs with Saffron Rice

Ingredients
- 1 1/2 lb minced chicken thighs
- 1 lb minced chicken breast
- 1 medium onion, grated
- 4 cloves garlic, minced
- 2 green chilies, finely chopped
- 1/2 cup fresh parsley, chopped
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp chili flakes
- 2 tsp paprika
- 1 1/2 tsp salt
- 4 cups cooked saffron basmati rice
- 1 large cucumber, diced
- 2 medium tomatoes, diced
- 1/4 cup fresh mint, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
Instructions
- In a large bowl, combine the minced chicken thighs and minced chicken breast. Add the grated onion, minced garlic, chopped green chilies, parsley, cumin, coriander, chili flakes, paprika, and salt. Knead the mixture with your hands for about 10 minutes until it becomes sticky and holds together well.
- Divide the mixture into equal portions and shape each portion around a skewer, forming long, even kebabs about 1 inch thick. Press the meat firmly onto the skewer to ensure it stays in place during cooking.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grates. Place the skewers on the grill and cook for 8–10 minutes, turning occasionally, until the kebabs are charred on the outside and cooked through. The internal temperature should reach 165°F (74°C).
- Transfer the cooked kebabs to a cutting board and let them rest for 3 minutes. This allows the juices to redistribute, keeping the kebabs moist.
- In a small bowl, combine the diced cucumber, diced tomatoes, chopped mint, lemon juice, and olive oil. Toss gently to coat everything evenly.
- Place a generous bed of saffron rice on a serving platter. Slide the kebabs off the skewers and arrange them over the rice. Serve the cucumber-tomato salad on the side or on top.
