Tips for success
For the most flavorful sauce, use a good-quality brown gravy—either homemade or a rich store-bought version. If you have leftover gravy from a previous roast, this is a great way to use it.
The pepperoncini are the star here, so don't be shy with them; they add a mild heat and a bright, vinegary tang that cuts through the richness of the pork and butter.
To make the sandwiches extra special, toast the brioche buns in a skillet with a little butter until golden and crisp. Pile the pork high and add a pepper on top for presentation.
If you prefer a less spicy dish, remove the seeds from the pepperoncini before adding them, or use only half the peppers and chop them so their flavor spreads more evenly.
Variations
- Spicy Kick: Add 1-2 teaspoons of crushed red pepper flakes or a chopped jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the pepperoncini brine to the sauce.
- Cheesy Sliders: After piling the pork on the buns, top with a slice of provolone or mozzarella and broil until melted. The gooey cheese adds richness and helps hold the sliders together.
- BBQ Twist: Swap the brown gravy for 1 cup of your favorite barbecue sauce and reduce the butter to 2 tablespoons. The result is a sweet and tangy pulled pork that's perfect for sandwiches or tacos.
- Low-Carb Option: Serve the shredded pork over cauliflower rice or zucchini noodles instead of buns. The rich gravy and tangy peppers are delicious without the carbs.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze the shredded pork in the sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a splash of beef broth or water if the sauce is too thick.
Store leftover shredded pork in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a splash of broth or water when reheating to loosen it. The flavors will continue to meld, making the leftovers even more delicious.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, simply place the insert in the slow cooker and cook as directed. You can also cook the pork fully, shred it, and freeze it in the sauce for up to 3 months.
Serving ideas
The most popular way to serve this pork is on toasted brioche slider buns, with a spoonful of the sauce over the top.
The buttery buns complement the tangy, savory pork beautifully. You can also serve it over mashed potatoes, rice, or egg noodles, letting the gravy soak into the starch.
For a complete meal, add a simple green salad or roasted vegetables on the side. The pork is also fantastic in tacos, on top of nachos, or stuffed into baked potatoes. The possibilities are endless, so don't be afraid to get creative with leftovers.

Pepperoncini Ranch Pork Roast: 5-Ingredient Crockpot Dinner

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1 cup beef or pork brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork sirloin roast in the center of the slow cooker insert. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Pour the brown gravy over the roast and seasonings. Dot the top of the roast with the butter pats.
- Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 4-5 hours, until the pork is fork-tender and easily shreds. The internal temperature of the pork should reach at least 145°F (63°C) for food safety, but for shredding it will be much higher, around 190-200°F (88-93°C). Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Using two forks, shred the meat into bite-sized pieces, discarding any large fat pieces. Return the shredded pork to the slow cooker and stir it into the sauce. Let it rest in the sauce for at least 3 minutes before serving.
- Serve the shredded pork on toasted brioche slider buns or over mashed potatoes. Use a slotted spoon to lift the pork out of the gravy, and spoon extra sauce on top if desired.
