Tips for success
For the best flavor, use high-quality dry mixes—look for ones with recognizable ingredients and no MSG if that's a concern.
You can also make your own ranch seasoning with buttermilk powder, dill, and garlic. The au jus mix adds a deep, beefy note; if you prefer, substitute a cup of beef broth plus a splash of Worcestershire sauce.
The pepperoncini are the secret to the tangy kick. If you love heat, add a few more or include a spoonful of the brine from the jar. For a milder version, remove the stems and seeds before adding.
The peppers soften during cooking, so they're not crunchy—they become mellow and almost sweet, with a pleasant acidity that cuts through the richness of the butter.
Variations
- Spicy Pepperoncini: Add 2-3 sliced jalapeños or a teaspoon of red pepper flakes along with the pepperoncini for extra heat. You can also include a few tablespoons of the pepperoncini brine to amp up the tang.
- Beef Chuck Roast: Swap the pork for a 3-4 pound beef chuck roast. Cook on LOW for 8-10 hours until fork-tender. The beef pairs wonderfully with the same seasonings and yields a rich, hearty gravy.
- Creamy Ranch Pork: After shredding, stir in 1/2 cup of sour cream or cream cheese to make a creamy, tangy sauce. Heat through gently without boiling to avoid curdling.
- Low-Sodium Version: Use low-sodium ranch and au jus mixes, and omit the added salt. The pepperoncini and butter still provide plenty of flavor, and you can adjust seasoning at the end.

Serving ideas
Serve the shredded pork over buttered egg noodles, as shown in the video, or alongside mashed potatoes, rice, or crusty bread for soaking up the gravy.
A simple green salad or steamed vegetables balance the richness. For a low-carb option, serve over cauliflower rice or with roasted vegetables.
The tangy pepperoncini and savory gravy also work beautifully in sandwiches—pile the pork onto a soft roll, top with provolone, and broil until melted for a quick Italian-style sub. Leftovers can be transformed into tacos, quesadillas, or a hearty hash the next day.

Pepperoncini Ranch Garlic Butter Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 oz dry ranch dressing mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole yellow pepperoncini peppers
- 4 tbsp garlic-herb compound cowboy butter, cut into medallions
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole yellow pepperoncini peppers over and around the roast.
- Place the garlic-herb compound butter medallions on top of the roast, spacing them evenly. The butter will melt and baste the pork as it cooks.
- Cover the slow cooker and cook on LOW for 8 hours, or until the pork is fork-tender and easily shreds. Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Transfer the roast to a cutting board and let it rest for 3 minutes. Shred the pork with two forks, discarding any large fat pieces. Return the shredded pork to the slow cooker and stir to coat with the juices. Serve warm over buttered egg noodles or as desired.
