Tips for success
For the most flavorful result, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker.
This step adds a deep, caramelized crust that enriches the final sauce. If you're short on time, skip it—the slow cooker will still produce delicious results, but searing elevates the dish.
To make the sauce thicker, remove the pork after cooking and transfer the liquid to a saucepan. Simmer over medium heat for 10-15 minutes until reduced by about a third, then stir it back into the shredded meat. For a smoother sauce, use an immersion blender to puree the peppers and liquid before adding the pork back.
Variations
- Spicy Pepperoncini Pork: Add 1/4 cup of the pepperoncini pickling liquid to the pot along with the peppers, and slice 5 of the peppers before adding. This intensifies the tangy heat. Serve with pickled jalapeños on the side for extra spice.
- BBQ-Style Pulled Pork: After shredding, stir in 1/2 cup of your favorite barbecue sauce and 1 tablespoon of brown sugar. Omit the buttered noodles and serve on buns with coleslaw for a classic pulled pork sandwich.
- Creamy Ranch Pork: After shredding, stir in 1/2 cup of sour cream or cream cheese to make the sauce creamy and rich. This works well over mashed potatoes or in tacos. Adjust salt to taste, as the mixes already contain sodium.
- Mexican-Style Pork: Swap the ranch mix for 1 tablespoon taco seasoning and the au jus mix for 1 teaspoon cumin and 1 teaspoon chili powder. Add a drained can of diced green chiles. Serve in tortillas with avocado and lime.

Reheat gently in a skillet or microwave, adding a splash of water or broth if the sauce has thickened. The pork can also be frozen in portion-sized containers for up to 3 months; thaw overnight in the fridge before reheating.
This recipe is ideal for making ahead. Assemble the raw pork, seasonings, peppers, and butter in the slow cooker insert and refrigerate overnight.
In the morning, place the insert in the slow cooker base and cook as directed. Leftovers keep well and taste even better the next day, making it a great option for meal prep or feeding a crowd.
Serving ideas
Serve the pepperoncini ranch garlic butter pork over a bed of warm buttered egg noodles, as shown. The noodles soak up the rich, tangy gravy, making every bite satisfying. For a lighter option, serve the pork on a bed of greens or in lettuce cups, or pile it onto toasted buns for a pulled pork sandwich with a kick.
Garnish with a few extra pepperoncini and a sprinkle of chopped fresh parsley or chives if desired. The dish pairs well with a crisp green salad or roasted vegetables to balance the richness.
For a low-carb choice, serve over cauliflower rice or alongside steamed broccoli. Leftovers can be transformed into tacos, nachos, or a hearty pasta sauce.

Pepperoncini Ranch Garlic Butter Pork Shoulder

Ingredients
- 4 lb boneless Boston butt pork shoulder roast
- 1 oz dry ranch dressing mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole yellow pepperoncini peppers
- 4 tbsp garlic-herb compound cowboy butter, cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the pork shoulder in the center of a 6-quart slow cooker. Sprinkle the dry ranch mix and au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers around and on top of the roast.
- Place the medallions of garlic-herb compound cowboy butter on top of the seasoned roast. They will melt and baste the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding, it will be much higher, typically around 200°F (93°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Transfer the roast to a cutting board and let it rest for at least 10 minutes. Using two forks, shred the pork into bite-sized pieces, discarding any large fat chunks.
- Return the shredded pork to the slow cooker and stir it into the accumulated juices and melted butter. The pepperoncini will soften and can be left whole or roughly chopped. Let it sit on warm for 10 minutes to absorb the sauce.
- Spoon the hot pork and pepperoncini mixture over warm buttered egg noodles. Serve immediately.
