Tips for success
For the most tender results, cook on LOW for the full 8 to 10 hours. The longer cooking time allows the collagen to break down completely, resulting in shreds that are almost buttery.
If you’re short on time, HIGH for 5 to 6 hours works, but the meat may be slightly less tender. Always let the meat rest after cooking to keep it moist.
The gravy is the star—don’t let it go to waste. Spoon it generously over the rice and pork.
If the gravy seems too thin, you can thicken it by mixing 1 tablespoon of cornstarch with 2 tablespoons of cold water and stirring it into the slow cooker during the last 30 minutes. For extra tang, add a splash of pepperoncini brine.
Variations
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the pepperoncini. For extra heat, include a few tablespoons of the pepperoncini brine in the slow cooker.
- Smoky Twist: Substitute the dry ranch mix with a chipotle ranch seasoning, and add 1 teaspoon of smoked paprika. This adds a subtle smokiness that pairs well with the pork.
- Herb Garden: Add 2 sprigs of fresh rosemary and 3 sprigs of fresh thyme to the slow cooker during cooking. Remove before shredding. The herbs infuse a gentle, aromatic flavor.
- Creamy Mushroom: Add 8 oz sliced cremini mushrooms to the slow cooker during the last hour of cooking. The mushrooms absorb the sauce and add an earthy depth.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pork can be reheated gently in the microwave or on the stovetop with a little extra broth to keep it moist. The flavors will continue to meld, making leftovers even more delicious.
This recipe is ideal for meal prep. You can assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. The pork also freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the pepperoncini ranch dijon cream pork shoulder over steamed white rice, which soaks up the rich gravy beautifully.
For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables. A simple green salad with a light vinaigrette would also complement the richness of the pork.
Garnish with fresh parsley or chopped chives for a pop of color, if desired. The dish is hearty enough to stand alone, but crusty bread or warm tortillas are excellent for sopping up every bit of the sauce. For a complete meal, add a side of sautéed greens or a crisp slaw.

Pepperoncini Ranch Dijon Cream Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 pepperoncini peppers
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1/2 cup beef au jus
- steamed white rice, for serving
Instructions
- Place the pork shoulder roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the pepperoncini peppers over and around the roast.
- Dollop the sour cream over the roast and spread it gently. Spoon the whole-grain Dijon mustard over the sour cream. Pour the beef au jus along the side of the roast, not directly on top, to avoid washing off the seasonings.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C), but for the most tender results, cook until it reaches 195°F (91°C) to 205°F (96°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the liquid for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to handle.
- Using two forks, shred the pork directly in the slow cooker, mixing it with the cooking liquid, pepperoncini, and any remaining seasonings. The meat should pull apart into long, tender ribbons.
- Spoon the shredded pork and its gravy over steamed white rice on a plate. Serve hot, with extra pepperoncini on the side if desired.
