Tips for success
For the most tender pork, cook on LOW rather than HIGH. Low and slow gives the collagen time to break down fully, resulting in shreddable, juicy meat.
If you're short on time, HIGH will work, but the texture won't be quite as silky. Always let the meat rest before shredding to keep it moist.
The cooking liquid is liquid gold. After shredding, return the pork to the slow cooker and toss it with the juices so every bite is coated.
If the sauce seems too thin, you can simmer it on the stovetop for a few minutes to reduce and thicken it. Taste before adding salt—the seasoning packets are quite salty.
Variations
- Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a chopped jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the pepperoncini brine for more tang.
- Beef Version: Swap the pork shoulder for a 3-4 pound beef chuck roast. Cook on LOW for 8-10 hours until fork-tender. The same seasonings work beautifully with beef, and you can shred it for sandwiches or serve over mashed potatoes.
- Sandwich Style: Pile the shredded pork onto toasted hoagie rolls and top with provolone or mozzarella. Broil until the cheese melts for a delicious pepperoncini ranch pork sandwich. Serve with extra jus for dipping.
- Creamy Ranch Sauce: After shredding, stir in 1/2 cup of sour cream or cream cheese to make a creamy sauce. This adds richness and a tangy twist. Adjust the amount to your liking and heat gently until the sauce is smooth.

This recipe is perfect for making ahead. The cooked pork can be refrigerated for up to 4 days, and it actually tastes even better the next day as the flavors meld.

Serving ideas
Serve the shredded pork over whipped Yukon Gold mashed potatoes, as shown in the video. The creamy potatoes are the perfect base for the rich, saucy pork. You can also serve it on soft rolls for pulled pork sandwiches, or over rice or egg noodles for a hearty meal.
Garnish with a few of the cooked pepperoncini and a sprinkle of fresh parsley if you like. The tangy peppers are a delicious contrast to the buttery pork.
For a complete meal, add a simple green salad or roasted vegetables on the side. This dish is satisfying on its own, but the sides make it a feast.

Pepperoncini Ranch Butter Pork Shoulder: 5-Ingredient Slow Cooker Dinner

Ingredients
- 4 lb boneless pork shoulder roast (Boston butt)
- 1 oz dry ranch dressing and seasoning mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole yellow pepperoncini peppers
- 1/2 cup salted butter (1 stick)
Instructions
- Place the pork shoulder in the center of a 6-quart slow cooker. Sprinkle the dry ranch mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Place the stick of salted butter directly on top of the seasoned roast. Cover the slow cooker with the lid.
- Cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but it will be much higher and more tender. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the juices for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
- Transfer the roast to a cutting board. Using two forks, shred the pork into bite-size pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker and toss with the juices.
- Spoon the shredded pork onto a plate with whipped Yukon Gold mashed potatoes. Drizzle with a little of the cooking liquid from the slow cooker.
