Tips for success
For the best flavor, use a salsa you enjoy eating on its own—its personality will shine through. If you like extra heat, add a chopped jalapeño or a dash of hot sauce along with the salsa.
For a smokier note, use fire-roasted salsa or add a teaspoon of smoked paprika. The recipe is forgiving, so feel free to adjust the seasonings to your taste.
To make the dish even more substantial, stir in a cup of frozen corn kernels during the last 30 minutes of cooking. Or, serve the chicken mixture over steamed rice, quinoa, or cauliflower rice to soak up the sauce.
For a crunchy contrast, offer tortilla chips on the side. Leftovers can be repurposed into tacos, burritos, or a hearty nacho platter.
Variations
- Spicy Black Bean Version: Swap the pinto beans for black beans and add a finely chopped chipotle pepper in adobo sauce for extra smokiness. Use a hot salsa and pepper jack for a fiery kick. Serve with cool sour cream to balance the heat.
- Chicken Breast Option: Use boneless, skinless chicken breasts instead of thighs. Cook on low for 3 to 4 hours, until the chicken reaches 165°F (74°C). Shred and return to the sauce. The breast meat will be slightly leaner but still delicious.
- Veggie-Packed Version: Add a diced bell pepper, a small zucchini, and a cup of frozen corn along with the beans. The vegetables will soften as they cook and add color and nutrition. You may need to increase the salsa slightly to keep everything moist.
- Creamy Cilantro-Lime Finish: After shredding the chicken, stir in a handful of chopped fresh cilantro and the juice of one lime. The bright, citrusy notes cut through the richness of the cheese and add a fresh finish.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of chicken broth or water when reheating to loosen it if needed. This dish also freezes well for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop or microwave.
You can assemble the uncooked ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. If starting from cold, add about 30 minutes to the cooking time. This makes it even easier to get dinner going on a busy morning.
Serving ideas
Serve the pepper jack taco chicken as a main dish with warm tortillas, rice, or a crisp green salad. It also makes a fantastic filling for tacos, burritos, or quesadillas.
Set out bowls of shredded lettuce, diced tomatoes, sour cream, and sliced avocado so everyone can build their own meal. The creamy, spicy sauce is the star, so don't skimp on the toppings.
For a casual gathering, turn this into a nacho bar: pile tortilla chips on a platter, spoon the chicken mixture over the top, and finish with jalapeños, olives, and a drizzle of extra queso.
Or, serve it in bowls with a side of cornbread for a comforting, rustic dinner. However you serve it, this dish is sure to become a weeknight favorite.

Pepper Jack Taco Pinto Chicken Thighs Crockpot Dinner

Ingredients
- 6 boneless skinless chicken thighs
- 1 oz taco seasoning mix
- 15 oz canned pinto beans, drained and rinsed
- 1 1/2 cups chunky salsa
- 1 cup queso blanco dip
- 1 cup shredded pepper jack cheese
Instructions
- Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Sprinkle the taco seasoning evenly over the chicken. Add the drained pinto beans and chunky salsa, spreading them over the chicken to cover it evenly.
- Spoon the queso blanco dip over the top of the chicken and bean mixture. Sprinkle the shredded pepper jack cheese evenly over the queso. Do not stir; the cheeses will melt and create a creamy layer as it cooks.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is fork-tender and cooked through. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part.
- Once the chicken is cooked through, use two forks to shred the thighs directly in the slow cooker. Stir the shredded chicken into the sauce and beans so everything is coated evenly. Let it sit for 5 minutes to absorb the sauce.
- Spoon the pepper jack taco pinto chicken onto plates or into bowls. Serve hot, optionally with tortilla chips, Mexican rice, or your favorite taco toppings. The sauce will thicken slightly as it cools.
