Tips for success
For the best texture, cut the potatoes into uniform pieces so they cook at the same rate. If you have extra time, you can brown the bacon before adding it for a deeper flavor, but it is not necessary.
Use a good-quality pepper jack for a more pronounced kick. If you prefer a milder dish, swap in Monterey Jack or cheddar. The crispy onions are best added right before serving if you want them extra crunchy—just sprinkle a handful on top after cooking.
This recipe is forgiving and adaptable. If you want to add vegetables, toss in some sliced mushrooms or bell peppers with the potatoes. For a protein boost, add cooked chicken or ham.
The sauce can be thinned with a splash of milk if it becomes too thick. Always taste before serving and adjust seasoning with salt and pepper. Remember that the bacon and soup are salty, so go easy on added salt.
Variations
- Vegetarian Version: Omit the bacon and use condensed cream of mushroom soup instead of chicken. Add a cup of frozen peas or corn with the potatoes for extra color and texture. The rest of the recipe stays the same.
- Spicy Southwestern: Add a drained can of diced green chiles or a chopped jalapeño to the sour cream mixture. Use pepper jack cheese and top with crushed tortilla chips instead of fried onions for a crunchy, spicy twist.
- Loaded Baked Potato: Stir in cooked, crumbled sausage or shredded rotisserie chicken along with the bacon. Top with chopped scallions and a dollop of extra sour cream before serving. This turns it into a complete meal.
- Cheesy Herb: Mix in 2 teaspoons of dried chives or 1 tablespoon of fresh thyme with the sour cream. Use a blend of cheddar and Gruyère instead of pepper jack. Finish with a sprinkle of fresh parsley for a garden-fresh flavor.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of milk or broth to loosen the sauce. The dish can also be frozen for up to 2 months—thaw overnight in the fridge before reheating.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the ingredients start cold. This makes it perfect for busy mornings or entertaining.
Serving ideas
Serve this potato bake as a hearty side dish alongside roasted chicken, grilled steak, or pork chops. It also shines as a vegetarian main if you omit the bacon and use cream of mushroom soup.
Pair it with a crisp green salad or steamed vegetables to balance the richness. For a casual meal, spoon it into bowls and top with extra crispy onions and fresh chives.
This dish is great for potlucks and family dinners because it stays warm in the slow cooker. Set the cooker to warm after cooking and let guests serve themselves.
For a fun twist, use it as a topping for baked potatoes or as a filling for breakfast burritos. The creamy, cheesy sauce pairs well with crusty bread to soak up every last bit.

Pepper Jack Sour Cream Red Potato Bake

Ingredients
- 3 lb baby red bliss potatoes, quartered
- 8 oz smoked bacon, diced
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 2 cups shredded pepper jack cheese
- 1 cup crispy French-fried onions
Instructions
- Place the quartered baby red bliss potatoes in the slow cooker insert. Scatter the diced smoked bacon evenly over the potatoes. Use clean hands or a spoon to gently toss the potatoes and bacon together so the bacon is distributed throughout.
- Spoon the condensed cream of chicken soup over the potato mixture. Add the sour cream in dollops. Stir gently with a spatula until the soup and sour cream are mostly combined with the potatoes and bacon, but do not overmix.
- Sprinkle the shredded pepper jack cheese evenly over the top of the potato mixture. Then scatter the crispy French-fried onions over the cheese, covering the surface as much as possible.
- Cover the slow cooker with its lid. Cook on low for 4 to 5 hours, or until the potatoes are fork-tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- After 4 hours, gently stir the mixture to redistribute the sauce and cheese. Check a potato piece by piercing it with a fork; it should slide off easily. If not, continue cooking for another 30 minutes to 1 hour. Let it rest for 3 minutes before slicing.
- Once the potatoes are tender, turn off the slow cooker. Use a large serving spoon to scoop the potato bake onto plates or a serving dish. Make sure to include some of the crispy onions and melted cheese from the top with each scoop. Let it rest for 3 minutes before slicing.
