Tips for success
To intensify the flavor, you can brown the pork shoulder chunks in a hot skillet before adding them to the slow cooker. This adds a caramelized crust that enhances the overall taste.
However, the recipe works perfectly without this step, making it truly dump-and-go. If you have extra time, browning is a nice touch, but not essential.
For a thicker, richer sauce, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This will help the sauce cling to the meat. Alternatively, you can remove the pork and simmer the sauce on the stovetop until reduced. Adjust the heat level by using fewer jalapeños or a milder pepper jack cheese.
Variations
- Chicken Version: Substitute 3 pounds of boneless, skinless chicken thighs for the pork. Cook on LOW for 6-7 hours or until chicken is tender and shreds easily. The cooking time is shorter than pork, so check for doneness at 6 hours.
- Beef Carnitas: Use 3 pounds of beef chuck roast instead of pork shoulder. Cook on LOW for 8-10 hours until the beef is fork-tender. Shred and serve with the same tomato-jalapeño queso sauce.
- Smoky Chipotle Twist: Add 2-3 chipotle peppers in adobo sauce, minced, along with the tomatoes. This adds a deep, smoky heat that complements the pork and cheese. Adjust the amount to your spice preference.
- Mild and Creamy: For a milder version, use regular diced tomatoes, omit the pickled jalapeños, and use Monterey Jack cheese instead of pepper jack. Add a can of drained black beans for extra heartiness.

Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or in a skillet over medium heat until heated through. The sauce may thicken when chilled; add a splash of chicken broth or water when reheating to loosen it.
This recipe is perfect for meal prep. Assemble the ingredients in the slow cooker insert and store it in the refrigerator overnight. In the morning, place the insert in the slow cooker base and cook as directed. You can also cook the full batch, shred the pork, and freeze portions for up to 3 months.
Serving ideas
Serve the carnitas warm, piled onto soft corn or flour tortillas. Top with fresh cilantro, diced white onion, and a squeeze of lime juice for brightness.
A dollop of sour cream or avocado slices adds a cool contrast to the spicy sauce. For a low-carb option, serve over cauliflower rice or a crisp green salad.
This dish also shines as a filling for burrito bowls, nachos, or quesadillas. Spoon the carnitas over a bed of Mexican rice and black beans, then drizzle with extra sauce.
For a crunchy texture, serve with tortilla chips for scooping. The leftovers are just as delicious—try them in a breakfast hash with eggs or as a topping for baked potatoes.

Pepper Jack Rotel Jalapeño Pork Carnitas Crockpot Recipe

Ingredients
- 3 lb pork shoulder, cut into 2-inch chunks
- 1 can (10 oz) fire-roasted diced tomatoes with green chiles
- 1/2 cup sliced pickled jalapeños
- 1 cup warm white queso blanco dip
- 1 1/2 cups shredded spicy pepper jack cheese
Instructions
- Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Pour the fire-roasted diced tomatoes with green chiles over the pork, spreading them evenly. Add the sliced pickled jalapeños on top of the tomatoes.
- Pour the warm white queso blanco dip over the top, then sprinkle the shredded spicy pepper jack cheese evenly over the entire mixture. Do not stir.
- Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 4-5 hours, until the pork is fork-tender and easily shreds apart. Let it rest for 3 minutes before slicing.
- Once the pork is tender, remove it from the slow cooker to a cutting board. Using two forks, shred the pork into bite-sized pieces. Return the shredded pork to the slow cooker and stir it into the sauce. Let it rest for 3 minutes before slicing.
- After returning the shredded pork to the slow cooker, let it cook on LOW for an additional 15-20 minutes, allowing the meat to absorb the flavors of the sauce. Let it rest for 3 minutes before slicing.
- Serve the carnitas hot, straight from the slow cooker. Use a slotted spoon to portion the meat and sauce over warm tortillas, rice, or tortilla chips. Garnish with fresh cilantro, diced onion, or lime wedges if desired.
