Before you start

Before starting, have all your ingredients ready: frozen tater tots, cooked and crumbled bacon, caramelized onions, roasted garlic cream sauce, shredded pepper jack cheese, and French-fried onions.

If you're making the caramelized onions from scratch, do that ahead of time—they take about 30 minutes. The cream sauce can also be made in advance and refrigerated. No need to preheat the slow cooker; just have it clean and ready to go.

Ingredients at a glance (6)
  • 2 lb frozen tater tots
  • 1 cup crispy crumbled bacon (about 8 slices)
  • 1 cup caramelized onions
  • 1 cup roasted garlic cream sauce
  • 2 cups shredded pepper jack cheese
  • 1 cup crispy French-fried onions

Instructions

Layer and Pour

  1. Layer the Base
Place the frozen tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crispy crumbled bacon evenly over the tots, then scatter the caramelized onions over the top.
Look for The tots form a single layer, with bacon and onions distributed evenly.
Tip No need to thaw the tots—they will cook perfectly in the slow cooker.
  2. Pour the Cream
Pour the roasted garlic cream sauce evenly over the potato mixture, using a spatula to gently spread it so it reaches the edges.
Look for The cream coats the tots and onions, pooling slightly in the gaps.
Tip If the sauce is very thick, thin with a splash of milk or chicken broth.

The slow cooker is filled with an even layer of tater tots, topped with crumbled bacon and caramelized onions.

The roasted garlic cream sauce is poured over, coating the ingredients and pooling in the gaps. The mixture looks colorful and inviting, with the golden tots visible through the creamy sauce.

Cheese and Crunch

  1. Top with Cheese
Sprinkle the shredded pepper jack cheese evenly over the top, covering the entire surface.
Look for The cheese forms a complete, even layer over the tots.
Tip Use freshly shredded cheese for the best melt and flavor.
  2. Add Crispy Onions
Scatter the crispy French-fried onions over the cheese, spreading them out so they cover the top.
Look for The crispy onions create a golden, crunchy topping.
Tip Reserve a few extra onions to sprinkle on after cooking for extra crunch.

The top is covered with a generous layer of shredded pepper jack cheese, and the crispy French-fried onions are scattered over the cheese. The dish looks like a golden, crunchy-topped casserole ready to melt. The cheese is speckled with bits of onion and bacon, promising a rich, savory result.

Slow Cook and Serve

  1. Slow Cook
Cover the slow cooker and cook on low for 4 hours, or until the tots are tender and the cheese is melted and bubbly. Do not stir during cooking to keep the layers intact. Let it rest for 3 minutes before slicing.
Look for The edges are bubbling, and the cheese is fully melted and golden.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resist the urge to lift the lid—every peek lets out heat and adds cooking time.
  2. Serve Hot
Scoop the bake onto plates or a serving platter. Serve immediately while hot and creamy.
Look for The bake holds its shape when scooped, with gooey cheese pulling in strands.
Tip Let it rest for 5 minutes before serving to set slightly.

After 4 hours on low, the slow cooker is bubbling at the edges, and the cheese is fully melted and starting to brown. The crispy onions remain golden and crunchy. When scooped, the bake holds its shape with tender tots, creamy sauce, and gooey cheese pulling in long strands. The aroma is irresistible.

Common mistakes

One common mistake is lifting the lid too often to peek. Every time you open the slow cooker, heat escapes and adds 20 minutes of cooking time. Another is stirring the layers—this will break up the tots and make everything mushy.

Also, don't add extra liquid; the cream sauce provides enough moisture. Finally, avoid using pre-shredded cheese that contains anti-caking agents, as it may not melt as smoothly.

How to tell it’s done

The bake is done when the tater tots are tender all the way through—test with a fork—and the cheese is fully melted and bubbling around the edges. The top should be golden and slightly crispy in spots.

If you want a more browned top, you can transfer the insert to the oven under the broiler for 2–3 minutes, but watch closely. The internal temperature should reach at least 145°F (63°C) for the bacon, but since it's already cooked, the main check is the tots' tenderness.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
