Tips for success
For the crispiest top, sprinkle a few extra French-fried onions over the casserole just before serving.
This adds a fresh crunch that contrasts with the creamy interior. If you like extra heat, serve with a side of hot sauce or pickled jalapeños for a spicy kick.
This dish is incredibly versatile—try adding cooked sausage, shredded chicken, or black beans to make it a complete meal.
You can also swap the tater tots for frozen hash browns or diced potatoes. The slow cooker does all the work, so feel free to customize based on what you have on hand.
Variations
- Add Chicken: Add 2 cups of shredded rotisserie chicken to the layer after the soup. This makes it a heartier main dish and adds extra protein.
- Spicy Sausage: Replace the bacon with 1 cup of cooked and crumbled spicy breakfast sausage for a different flavor profile.
- Vegetarian Version: Omit the bacon and add an extra cup of green chiles or a can of black beans for a meatless dinner.
- Loaded Potato: Top the finished bake with sour cream, chives, and extra cheddar for a loaded potato effect.
Storage and make-ahead

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a 350°F oven until warmed through. The top may lose some crispness, but the flavor remains delicious.
You can assemble the casserole up to 24 hours in advance, cover, and refrigerate.
When ready to cook, add an extra 30 minutes to the cooking time. This is perfect for busy days—just set it in the morning and forget it.
Serving ideas
Serve this bake as a main dish with a side salad, steamed vegetables, or cornbread. It's also great as a hearty side for grilled meats or as a game-day snack.
Spoon generous portions onto plates, making sure to include the crispy top in every serving.
For a fun twist, serve it in bowls topped with a dollop of sour cream, sliced green onions, or a sprinkle of fresh cilantro. The creamy, spicy, and crunchy textures pair well with a cold beer or a glass of iced tea.

Pepper Jack Green Chile Tater Tot Bake: Easy Crockpot Comfort

Ingredients
- 2 lb frozen tater tots
- 1 cup cooked and crumbled bacon
- 1 cup fire-roasted Hatch green chiles, chopped
- 1 can (10.5 oz) condensed cheddar cheese soup
- 2 cups shredded pepper jack cheese
- 1 cup crispy French-fried onions
Instructions
- Place the tater tots in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the crumbled bacon evenly over the tots. Scatter the chopped green chiles over the bacon layer.
- Spoon the condensed cheddar cheese soup over the potato mixture. Use a spatula to spread it gently, covering as much surface as possible. It doesn't need to be perfect; it will melt and spread as it cooks.
- Sprinkle the shredded pepper jack cheese evenly over the soup layer. Finish with the crispy French-fried onions, covering the top completely.
- Cover the slow cooker and cook on low for 4 to 5 hours, until the tater tots are tender and the cheese is melted and bubbly. Do not stir during cooking, to keep the layers intact.
- After 4 hours, check that the tater tots are fully tender by inserting a fork into the center. The cheese should be completely melted and the onions lightly browned. If not done, continue cooking for another 30 minutes.
- Turn off the slow cooker and let the bake rest for 5 minutes. This allows the cheese to set slightly, making it easier to serve. Spoon onto plates, making sure to get some of the crispy top in every serving.
