Tips for success
For the best flavor, use freshly shredded pepper jack cheese; pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
Warm the queso blanco dip before adding to help it distribute evenly. If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to let some moisture evaporate.
This dish is incredibly versatile. Serve it over rice, in tortillas, or on a bed of lettuce for a low-carb option. Top with fresh cilantro, avocado, or a dollop of sour cream.
Leftovers can be stored in the refrigerator for up to 4 days and reheated gently on the stovetop or in the microwave.
Variations
- Chicken Thighs: Swap chicken breasts for boneless, skinless thighs for extra juiciness. Cook on low for 5-6 hours or until tender. Shred and proceed as directed.
- Spicy Version: Add a finely chopped jalapeño or a teaspoon of chipotle powder to the slow cooker for more heat. Use extra pepper jack cheese or a habanero jack for a fiery kick.
- Veggie-Packed: Add sliced mushrooms, zucchini, or corn along with the peppers and onions. This adds more texture and nutrients without changing the cooking time.
- Creamy Avocado: Top the finished dish with sliced avocado or a dollop of sour cream. The cool, creamy texture contrasts nicely with the spicy chicken.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk or broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little broth or milk if the sauce is too thick.
Store leftover fiesta chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of milk or broth if the sauce has thickened too much.
This recipe is perfect for meal prep. Prepare the ingredients the night before and store them in the slow cooker insert in the refrigerator.
In the morning, simply place the insert in the slow cooker and cook as directed. The cooking time may be slightly longer if starting from cold.
Serving ideas
Serve the fiesta chicken over steamed rice, in warm flour tortillas, or alongside crispy tortilla chips for nachos. A squeeze of fresh lime juice and a sprinkle of cilantro brighten up the dish. For a complete meal, add a side of Mexican rice or a simple green salad.
This dish is also great for feeding a crowd. Set up a taco bar with warm tortillas, shredded lettuce, diced tomatoes, and sour cream.
The creamy, spicy chicken is a guaranteed hit at any gathering. Store any leftovers in the fridge for quick lunches throughout the week.
