Before you start
Before you start, cut the chicken tenders into 1-inch pieces and mince the garlic. Measure out the gnocchi, sun-dried tomatoes, broth, cream, and cheeses so everything is ready to go.
No need to pre-cook anything—the slow cooker handles it all. If your slow cooker tends to run hot, check the dish at the lower end of the cooking time to avoid overcooking the chicken.
Ingredients at a glance (10)
- 2 lb chicken breast tenderloins, cut into 1-inch pieces
- 1 lb potato gnocchi
- 1/2 cup julienned sun-dried tomatoes in oil, drained
- 1 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 1/2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions
Layer and Top
- Layer the IngredientsPlace the cubed chicken tenders in the bottom of the slow cooker. Scatter the gnocchi and sun-dried tomatoes over the chicken. Pour the chicken broth and heavy cream over everything, then add the minced garlic, salt, and pepper. Stir gently to combine, making sure the chicken is mostly submerged.Look for The liquid should cover the chicken and gnocchi; if it doesn't, add a little more broth.Tip No need to pre-cook the gnocchi—it will cook perfectly in the slow cooker.
- Top with CheesesSprinkle the shredded Italian four-cheese blend and the grated Parmigiano-Reggiano evenly over the top of the mixture. Do not stir—the cheese will melt and form a golden crust as it cooks.Look for The top should be completely covered with cheese.Tip Use freshly grated Parmesan for the best melt and flavor.
At the end of this phase, the slow cooker contains a neat stack: chicken at the bottom, gnocchi and sun-dried tomatoes in the middle, and a generous layer of shredded cheese on top.
The cream and broth mixture should be visible around the edges. It should look like a hearty casserole ready to bake.
Slow-Cook
- Slow-Cook Until TenderCover the slow cooker and cook on LOW for 4 hours or on HIGH for 2 hours, until the chicken is cooked through and tender. The gnocchi should be soft and the sauce bubbly. Do not lift the lid during the first 3 hours to keep the heat steady.Look for The sauce will be bubbling around the edges and the chicken will shred easily with a fork.Safe temperature 165°F (74°C) internal temperature (poultry)Tip If the sauce seems too thin at the end, remove the lid and cook on HIGH for 20-30 minutes to reduce.
After 4 hours on LOW, the kitchen smells like garlic and Parmesan. The sauce is bubbling, the cheese has melted into a golden, blistered crust, and the chicken is fork-tender. The gnocchi have puffed up and absorbed some of the sauce. The texture should be creamy and cohesive, not watery.
Finish and Serve
- Stir and ServeGently stir the mixture to incorporate the melted cheese into the sauce. Taste and adjust seasoning with more salt and pepper if needed. Serve hot, spooning the creamy chicken and gnocchi onto plates or into bowls.Look for The sauce should be creamy and the cheese fully melted and stringy.Tip Serve immediately while hot and bubbly.
After stirring, the sauce is creamy and coats the back of a spoon. The chicken is juicy, the gnocchi are soft, and the sun-dried tomatoes add little bursts of tangy sweetness. The cheese is evenly distributed throughout, making every bite rich and satisfying.
Common mistakes
One common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Another is using fresh gnocchi, which can disintegrate; stick with shelf-stable.
Also, avoid overcooking—if the gnocchi sits too long in the hot sauce, it can turn gummy. Finally, don't skip the cheese topping; it's what creates that irresistible golden crust.
How to tell it’s done
The dish is done when the chicken is cooked through and registers 165°F (74°C) on an instant-read thermometer. The gnocchi should be tender but not mushy, and the sauce should be bubbling gently around the edges.
The cheese on top will be melted and lightly golden. If the sauce looks thin, remove the lid and let it cook on HIGH for an additional 20-30 minutes to thicken.
