Tips for success

For the best texture, roll the dough as thinly as possible without tearing—about 1/4-inch thick. This allows the bread to puff up evenly and cook through without becoming doughy.

If the dough springs back when rolling, let it rest a few more minutes. Use a light touch when handling the stuffed bread to avoid pressing out the air.

To keep the flatbreads warm while cooking the rest, place them on a baking sheet in a 200°F (93°C) oven. This also helps the butter stay melted.

If you prefer a crispier exterior, cook a little longer on each side, but watch that the bread does not burn. Serve immediately for the best texture and flavor.

Variations

  • Lamb and Feta: Replace ground beef with ground lamb and add crumbled feta cheese instead of mozzarella. Add a pinch of ground cinnamon or allspice to the filling for a Mediterranean twist.
  • Vegetarian Spinach and Cheese: Omit the meat and sauté spinach with garlic and onions. Mix with ricotta and mozzarella for a creamy, vegetarian filling. Season with nutmeg and black pepper.
  • Spicy Chicken: Use ground chicken and add chopped jalapeños, chili flakes, and a teaspoon of smoked paprika to the filling. Top with pepper jack cheese for extra heat.
  • Breakfast Style: Fill with scrambled eggs, cooked sausage, and cheddar cheese. Cook the flatbreads as directed, and serve with a dollop of sour cream or hot sauce.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or toaster oven to restore crispness.
Freezer
Freeze cooked flatbreads for up to 2 months. Reheat from frozen in a 350°F (175°C) oven for 10-15 minutes.
Reheat
Reheat in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven. Avoid microwaving to maintain crispness.

Store leftover flatbreads in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven. Avoid microwaving, as it makes the bread soggy.

The dough can be made a day ahead and kept in the refrigerator, covered. Let it come to room temperature before rolling.

The filling can also be prepared in advance and refrigerated; reheat slightly before assembling. Stuffed but uncooked flatbreads can be frozen for up to 2 months; thaw in the refrigerator before cooking.

Serving ideas

Serve the flatbreads warm, cut in half to show the juicy filling. Pair with a simple salad of greens, tomatoes, and cucumbers with a lemon-olive oil dressing.

A side of plain yogurt or tzatziki sauce complements the spiced beef beautifully. These flatbreads also make a great appetizer—cut into wedges and serve with a dipping sauce.

For a heartier meal, serve alongside rice pilaf or roasted vegetables. The bread is substantial enough to be a main course on its own. If serving a crowd, cut into smaller pieces and arrange on a platter. The warm, buttery aroma and gooey cheese make these flatbreads an instant favorite.

Frequently asked questions

Can this recipe be made gluten-free?
Yes, a gluten-free all-purpose flour blend can be used in place of regular flour. The dough may be slightly more fragile, so handle gently. Add a teaspoon of xanthan gum if the blend does not include it, and adjust the liquid as needed to achieve a soft dough.
Why does the flatbread not puff up?
The dough needs to be rolled thin enough (about 1/4 inch) and the skillet must be hot enough. If the heat is too low, the bread will cook slowly and not puff. Also, ensure the dough has rested sufficiently so the gluten is relaxed.
Can the filling be prepared ahead of time?
Yes, the filling can be cooked a day in advance and stored in the refrigerator. Reheat it gently before assembling the flatbreads. This saves time on the day of serving.
How should leftovers be reheated?
Reheat in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven until hot and crisp. Avoid microwaving, which makes the bread soggy.
Can these flatbreads be frozen?
Yes, both cooked and uncooked flatbreads can be frozen. For uncooked, freeze after stuffing and sealing, then cook from frozen, adding a few minutes to the cooking time. Cooked flatbreads can be reheated directly from frozen in the oven.

Golden pan-toasted Turkish flatbread cut in half, showing juicy spiced beef and melted cheese

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup warm milk
  • 1/2 cup warm water
  • 2 1/4 tsp active dry yeast
  • 1 1/2 tsp salt
  • 1 tbsp sugar
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 1 cup sweet peppers, finely chopped
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup unsalted butter, melted

Instructions

  1. In a large bowl, combine the warm milk, warm water, sugar, and active dry yeast. Let stand for 5 minutes until frothy. Add the salt and half of the flour, stirring with a wooden spoon. Gradually add the remaining flour, mixing until a soft dough forms. Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a towel, and let rest for 15 minutes.
  2. After resting, punch down the dough and divide it into 6 equal portions. Shape each portion into a smooth ball. Place the dough balls on a lightly floured surface, cover with the towel, and let rest for another 10 minutes while preparing the filling.
  3. In a skillet over medium heat, cook the ground beef, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Add the finely chopped onion and sweet peppers, and cook for another 3-4 minutes until softened. Season with salt and pepper to taste. Remove from heat and let cool slightly. Stir in the shredded mozzarella cheese.
  4. On a lightly floured surface, roll one dough ball into a 7-inch round. Place about 1/3 cup of the filling in the center. Fold the dough over the filling and pinch the edges to seal, forming a half-moon shape. Gently flatten with your hands to distribute the filling evenly. Repeat with the remaining dough and filling.
  5. Heat a large dry skillet or griddle over medium-high heat. Place one stuffed flatbread in the skillet and cook for 2-3 minutes until the bottom is golden brown and puffed. Flip and cook the other side for another 2-3 minutes until browned and cooked through. Brush generously with melted butter on both sides. Repeat with the remaining flatbreads.
  6. Transfer the cooked flatbreads to a cutting board. Brush with more melted butter if desired. Let rest for 2 minutes, then cut in half to reveal the juicy filling. Serve warm.
