Tips for success

For the absolute best crust on the filet mignon, let the steaks sit uncovered on a wire rack in the refrigerator for a few hours before cooking. This process helps dry out the surface moisture, which guarantees an exceptional sear. When ready to cook, simply pat off any remaining condensation and place the steaks directly into the hot skillet.

To elevate the mashed cauliflower, ensure the florets are completely dry after steaming before mashing them. Excess water will make the mash runny and thin. Using a food processor or a high-powered blender instead of a hand masher will yield an ultra-velvety, puree-like texture that feels incredibly luxurious.

Variations

  • Blue Cheese Butter: Top the hot, rested filet mignon with a dollop of crumbled blue cheese butter instead of the traditional herb butter for a sharp, savory twist.
  • Spiced Roasted Carrots: Toss the carrots with a pinch of ground cumin and coriander before roasting to add a warm, aromatic spice profile to the side dish.

Storage and make-ahead

Fridge
Keep leftovers in airtight containers in the refrigerator for up to 3 days.
Freezer
Freezing is not recommended for this dish as it alters the texture of the steak and vegetables.
Reheat
Reheat the steak gently in a 300°F (150°C) oven until warm, and warm the sides on the stovetop or microwave.

Store any leftover filet mignon and roasted vegetables in separate airtight containers in the refrigerator within two hours of cooking. Kept properly, the steak and vegetables will remain fresh for up to three days.

Store the mashed cauliflower in a separate container as well. To maintain the best texture, avoid freezing the cooked steak, as freezing can compromise the tenderness of the meat and make the vegetables soggy upon thawing.

While the filet mignon is best enjoyed immediately after cooking, the sides can easily be prepared ahead of time. Wash, peel, and cut the carrots and asparagus up to a day in advance and store them in the refrigerator.

The cauliflower mash can be fully prepared, cooled, and stored in an airtight container for up to two days. When ready to serve, simply reheat the mash gently on the stovetop and roast the vegetables while cooking the steaks.

Serving ideas

Serve this elegant dish on warm rustic plates to keep the food hot during presentation. Begin by spooning a generous portion of the creamy mashed cauliflower in the center of each plate, using the back of the spoon to create a slight well.

Arrange the roasted carrots and asparagus spears neatly to one side of the mash. Slice the rested filet mignon into thick, juicy slices and fan them out over the cauliflower.

Just before serving, spoon the warm herb butter remaining in the skillet directly over the sliced steak to create a beautiful, glistening glaze. Garnish each plate with a fresh sprig of rosemary for a pop of color and a delightful aroma.

This dish pairs wonderfully with a crisp green salad tossed in a light vinaigrette, or a crusty artisanal bread to soak up any extra herb butter.

Frequently asked questions

Can a different cut of beef be used for this recipe?
Yes, ribeye or New York strip steaks can be prepared using the same pan-searing and butter-basting method, though cooking times may vary based on thickness.
How is the butter kept from burning during basting?
Add the butter during the last few minutes of cooking, lower the heat slightly, and keep the butter moving by continuously spooning it over the steak.
Why is the mashed cauliflower watery?
Watery mash occurs when the cauliflower is not drained thoroughly after steaming. Ensure the florets are completely dry before blending.

Ingredients

  • 2 filet mignon steaks
  • 4 tbsp herb butter
  • 1 head cauliflower, cut into florets
  • 4 carrots, sliced
  • 8 spears asparagus, trimmed
  • rosemary sprigs for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Place the sliced carrots and trimmed asparagus spears onto a baking sheet. Roast the vegetables for 15 to 20 minutes until they are tender and slightly browned.
  2. Steam the cauliflower florets until completely tender, about 10 minutes. Transfer the hot cauliflower to a food processor and blend until completely smooth and creamy.
  3. Pat the filet mignon steaks dry with paper towels. Heat a heavy skillet over high heat. Add the steaks and sear without moving for 2 to 3 minutes until a rich crust forms.
  4. Flip the steaks, then add the herb butter to the skillet. Tilt the pan and continuously spoon the foaming melted butter over the steaks. Cook until the internal temperature reaches 145°F (63°C), then transfer to a plate and rest for 3 minutes.
  5. Spoon the warm cauliflower mash onto plates and arrange the roasted carrots and asparagus alongside. Place the rested filet mignon steaks on top of the mash, drizzle with the pan juices, and garnish with rosemary sprigs before serving.
