Tips for success
To get the absolute best caramelization on your pineapple, ensure the rings are patted completely dry with paper towels before they hit the hot skillet. Any excess moisture on the surface of the fruit will create steam, which prevents the sugars from caramelizing properly.
A dry surface allows the natural sugars to react quickly with the high heat, creating those beautiful, sweet, charred spots that elevate the flavor of the entire dish.
When working with a pre-made dark sweet glaze, keep a close eye on the heat level in your skillet. Because these glazes typically contain high amounts of sugar, they can transition from perfectly caramelized to burnt very quickly.
If the glaze begins to darken too rapidly or smell slightly scorched, immediately reduce the heat to low and add a tablespoon of water to loosen the mixture.
Variations
- Spicy Pineapple Chicken: Add one teaspoon of crushed red pepper flakes or sriracha to the glaze for a sweet and spicy kick.
- Sesame Pineapple Chicken: Sprinkle toasted sesame seeds over the finished dish along with the scallions and drizzle with a teaspoon of toasted sesame oil.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months; thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or broth to loosen the glaze, stirring occasionally until hot and sizzling throughout.
Allow the cooked chicken and pineapple to cool completely at room temperature for no more than two hours before storing. Place the leftovers, along with any remaining sticky glaze, into an airtight container. Store the container in the refrigerator for up to three to four days. The glaze may thicken further as it chills, but it will loosen up beautifully when reheated.
You can easily prep components of this dish ahead of time to save precious minutes on busy evenings. Chop the scallions and trim the chicken thighs a day in advance, keeping them stored separately in the fridge.
If making a homemade glaze instead of store-bought, whisk the ingredients together and store the mixture in a sealed jar in the refrigerator for up to two days.
Serving ideas
This sticky pineapple chicken pairs wonderfully with a bed of steamed jasmine rice or coconut rice, which perfectly absorbs the extra sweet and savory glaze.
For a lower-carb option, serve the chicken and caramelized pineapple over cauliflower rice or alongside a crisp green salad. The vibrant green of the scallions makes the dish visually stunning, so be generous when garnishing right before serving.
For a complete meal, serve this dish alongside steamed broccoli, snap peas, or stir-fried bell peppers. The crisp, fresh texture of the vegetables provides an excellent contrast to the tender chicken and sticky, rich glaze. You can also serve the chicken sliced thin inside lettuce wraps for a fun, hands-on dining experience that is both light and incredibly flavorful.

One-Skillet Sticky Pineapple Chicken

Ingredients
- 1 1/2 lb boneless skinless chicken thighs
- 1 can (20 oz) pineapple rings, drained
- 1/2 cup dark sweet glaze, store-bought or made ahead
- 1/4 cup chopped scallions
Instructions
- Heat a large skillet over medium-high heat. Add the chicken thighs to the hot pan and sear them for 5 to 6 minutes on each side until a deep golden-brown crust forms and they release easily from the pan. Remove the chicken from the skillet and set aside on a plate.
- Add the pineapple rings directly to the hot skillet. Cook the slices for 2 to 3 minutes on each side until they develop beautiful caramelized, dark golden-brown patches. Transfer the caramelized pineapple rings to the plate with the chicken and set aside.
- Pour the dark sweet glaze directly into the hot skillet over medium heat. Bring the glaze to a bubbling simmer, stirring constantly to scrape up any flavorful browned bits stuck to the bottom of the pan. Let it bubble for 1 to 2 minutes until it is hot and glossy.
- Return the seared chicken thighs and caramelized pineapple rings to the skillet, placing the pineapple slices directly on top of the chicken. Brush or spoon the bubbling glaze generously over the chicken and pineapple. Simmer for 5 minutes until the chicken is cooked through to an internal temperature of 165°F (74°C).
- Remove the skillet from the heat. Sprinkle the chopped scallions evenly over the hot, glazed chicken and caramelized pineapple rings. Serve immediately while sizzling hot.
